Mom's Italian Style Potatoes

Thursday, September 24, 2009

You can also try variations of these with ranch dressing, melted cheese and bacon on ....delicious. Also try chili cheese fries, chili and melted cheese on top.... We just love them plain as shown.

These were always a big hit with any meat for a side dish. My mom would make these so crisp, sometimes they had the taste of a potato chip on the ends of them.

These will go with any meal as a side dish. Delicious all by themselves baked to perfection. I love to serve these with any meal.

You will need, a large cookie sheet lined with aluminum foil, spray with non stick oil.

Cut up six large potatoes and slice length wise like steak fries.

In a large bowl, add 1/4 cup of extra virgin olive oil over the top of the potatoes stir making sure they are well coated stir them up evenly.

Sprinkle with:

1/4 teaspoon each, garlic powder, salt, pepper, oregano, basil, parsley.
Optional: 1/2 teaspoon dried rosemary also

Next sprinkle on top:  1/4 cup grating cheese I use a blend of romano and parmesan.

Spread on the cookie sheet. Sprinkle Italian flavored bread crumbs over the whole pan of seasoned potatoes. Bake on 425 until crispy and golden around 40 minutes or longer for crispier fries.

  1. Mmm, great combo of seasoning. I only like the thicky and juicy fries; not the scrawny stringy fries usually served in American diners that just taste like grease. I'll have to bake these up next time I'm in the mood for fries - thanks!
