Blackberry Merlot Chilled Soup Recipe

A wonderful chilled soup called Blackberry Merlot Chilled Soup, it's so refreshing and the first one I had was on a cruise with Royal Caribbean!



Here is a delightful first appetizer and start of the summer delicious meal.



This is an adult soup, and not made for kids but guess what? Just substitute Welchs Grape Juice for the Merlot for them!



There are so many ways to adapt soups that are made with fruit, even if your not fond of blackberries you can substitute another.



Berries in abundance this time of the year makes this kind of soup so special and a usual must be on "the list" to make for me. I always look forward to berry season.



We just love anything made with berries especially Summer Berry Muffins to start the day or this Blackberry Marinade for Shrimp kabobs for dinner!

I experienced many chilled soup on my cruises and this has been my favorite by far.


Just remember any fruits can be used with the coordinating fruit juice for non-alcohol soups.


This soup is just amazing and shouts summer.


In my mind, berries are as much a part of summer as fresh-cut hay, soft ice cream, and leisurely moments like laying in the sun and swimming.


Sit back relax and enjoy this cold Blackberry Merlot Soup as one of the summers best started before dinner.

Blackberry Merlot Chilled Soup Recipe

Here is a delightful soup we once had on a cruise at dinner time I fell in love with. I got to see the kitchen and was given the recipe. It so darn delicious! Refreshing Blackberry Merlot Soup

Ingredients:

  • 3 cups blackberries
  • 1 cup Merlot wine, Cabernet or use grape juice (kids version)
  • 1 cup water
  • 2 tablespoons lemon juice
  • 1 1/4 cups sugar
  • 2 cups whipping cream
  • 1/2 teaspoon orange zest
  • 1/2 tablespoon cornstarch
  • 2 tablespoons cold water

Instructions:

  1. Place blackberries, water, wine, lemon juice, and sugar in a large pot.
  2. Bring to a boil, then turn down the burner to low and simmer for 15 minutes.
  3. Turn the burner off and allow the mixture to cool.
  4. Once the mixture is cooled, place it in a food processor and mix well.
  5. Strain processed liquid through a strainer, mashing the pulp through the strainer with the back of a large metal spoon.
  6. Return the strained liquid to the pot and add 1/2 tablespoon of corn starch dissolved in 2 tablespoons of cold water.
  7. Cook until thickens a little to your liking
  8. Return the mixture to the food processor and add whipping cream and orange zest.
  9. Chill overnight.
  10. Serve cold with a dollop of whipped or sour cream and mint sprig.

  22. Chilled soup is perfect for the summer. I always used to get strawberry soup in Disney World. Black berries and Merlot have a more sophisticated feel to it. It looks wonderful!
