Italian Sauteed Broccoli Recipe

Italian Sauteed Broccoli is pretty much a no-brainer when it comes to making this side dish.

It requires some boiling of water to ensure it's cleaned (or microwave it for 4 minutes to soften the stalks in some water) cut it up saute and viola it's ready.

We love a garlicky flavor of sauteed broccoli, it's really delicious with whatever you serving and the broccoli leftover (if any) is perfect over a bed of rice or pasta!

Step by Step

  1. Steam, microwave or boil the broccoli florets for around 5 minutes covered in water and then drain and blot dry
  2. Heat olive oil and sliced garlic in a pan on the stovetop saute until fragrant around 3 minutes
  3. Add the drained broccoli to the sauteed garlic and oil and heat for around 3 to 4 minutes until it's coated.

A delicious simple side dish with garlic and oil for broccoli florets, Italian style.

Ingredients

  • 1 fresh head of Broccoli cut up removing stalks and saving the florets
  • 3 fresh cloves of garlic sliced
  • extra virgin olive oil a few tablespoons
  • water for steaming

Instructions

  1. Place the broccoli florets in a colander and wash them.
  2. Steam, microwave or boil the broccoli for around 5 minutes covered in water with a pinch of salt.
  3. If you prefer softer vegetables cook them longer.
  4. Drain and pat dry the broccoli.
  5. In a large frypan, add 3 tablespoons extra virgin olive oil.
  6. Add 3 cloves of whole garlic and saute to a light golden color to flavor the oil.
  7. You can either remove it or leave it in.
  8. Add steamed broccoli.
  9. Saute quickly to coat and fry until the broccoli is coated all over with the garlic oil around 3 or 4 minutes.
  10. Sprinkle with salt, pepper, and either red pepper flakes or a dash of cayenne pepper heat
  11. This can actually be served as a side dish or a topping for pasta, rice, or even pizza

  15. microwaved broccoli? sorry. sounds awful.

    ... and certainly no water should be added. broccoli is better with the minimum added liquid possible so it remains green and with a slightly crunchy texture.


    how about this:

    1. heat a tbsp of olive oil in the wok on the highest heat.

    2. throw in a few pinches of chilli flakes according to taste, fry until fragrant.

    we do not add garlic to this as we find it a bit overwhelming. you may choose to add some about now if you like it.

    3. add one anchovy whole, stir around and press it, so it melts into the oil, it will disintegrate into little pieces.

    4. add 1 lb chopped broccoli with a pinch of salt and at most, a drizzle of white wine.

    use NO water at all ... it softens the broccoli and wrecks its lovely texture.

    5. you may add three flakes of MSG if you prefer. as we disbelieve the nonsense talked about MSG we don't mind a pinch of it. your mileage may vary.

    6. cover and cook for two minutes, then let stand for two minutes more before serving.
