There is nothing better with the onset of fall other than making pumpkin recipes, and we have so many wonderful recipes in our collection, but pumpkin fritters are made the most all season!

These little fried pumpkin fritters will grab you just by the aroma of the seasonal spices while frying and it's an immediate addiction to all pumpkin lovers.

Little bundles of moist pumpkin spice fritters rolled in cinnamon sugar or powdered sugar while still warm makes these melt in your mouth a perfect bite.

We just can't get enough of these litte fried gems, they are sure to win a pumpkin lovers heart.

Mini Fritter Donuts

Tips

  1. do not overbeat the batter
  2. fold in the puree
  3. use fresh puree not pie filling
  4. make sure the oil is hot before frying
  5. for uniform fritters use a melon ball scoop or ice cream sized scoop
  6. roll in powdered sugar or cinnamon sugar
  7. add cinnamon to the powdered sugar for a snowy fall look and taste or other spices like cloves, nutmeg, or pumpkin pie spice

Seasonal spices, pumpkin, apples, and cooler weather always makes me want to make pumpkin fritters or any pumpkin recipes.

Pumpkin Fritters

This is a tiny mini donut called a fritter made with pumpkin puree. These pumpkin fritters are the perfect kickoff for fall and a delicious little fried cake bite rolled in powdered or cinnamon sugar.

Ingredients

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon each ginger and nutmeg
  • 1/4 cup brown sugar
  • 2 large eggs
  • 2 tablespoons butter softened
  • 2 teaspoons vanilla extract
  • 3/4 cup buttermilk
  • 3/4 cup pumpkin puree
  • oil for frying around 3 cups of vegetable oil or canola
  • Garnish: cinnamon and sugar mixture or powdered sugar

Instructions

  1. Heat the oil in a large deep saucepan to be around 2 inches deep on medium-low heat ( it's number 3 on my dial).
  2. In a large bowl first beat the eggs with sugar, cinnamon, ginger, nutmeg, salt, vanilla, and butter.
  3. Add all the rest of the dry ingredients (flour and baking powder) then slowly add the buttermilk then fold in the puree.
  4. Drop into hot oil with either a tablespoon or a melon ball scoop.
  5. Cook on both sides until golden brown around 4 minutes total flipping once ( I take one out and test the middle with a toothpick to ensure the batter is cooked).
  6. Drain on paper towels.
  7. Roll in powdered sugar or cinnamon sugar while warm and again when cooled.
