A decadent easy no-bake fudge, simple elegant and perfect for the holiday. If you love giving homemade gifts, this should be the first on your list to make.

ingredients:

  • 16 ounces of white chocolate chips
  • 1- package (8 ounces) of cream cheese, softened
  • 3- 1/4 cups powdered sugar
  • 1 teaspoon almond extract
  • 1/2 teaspoon Amaretto liqueur
  • 1/8 teaspoon salt
  • 1/2 cup chopped pistachios
  • 4 tablespoons chopped almonds
  • cooking spray
  • parchment paper
  • Garnish Choices:
  • whole pistachios
  • red and green maraschino cherries
  • green food coloring is optional

instructions:

How to cook Italian Amaretto Pistachio Fudge

  1. Line an 8-inch square with parchment paper. Spray parchment lightly with cooking spray.
  2. Melt chocolate in the microwave stirring every 30 seconds.
  3. Beat cream cheese using an electric mixer in a medium-sized bowl and beat until smooth. 
  4. Add sugar gradually and beat on low speed until smooth and not grainy.
  5.  Add melted chocolate, extracts, and chopped almonds, ( you would add the food coloring here) and mix well. Stir in chopped pistachios.
  6. Spread evenly in the prepared pan. Garnish with additional pistachios, green cherries, or red. Refrigerate until firm. Store in an airtight container, and take it out of the refrigerator when needed.

  8. You mentioned pistachios and remembered I had some left over - now I'm snacking on them. This recipe sounds so good. I love all the ingredients. However it calls for chopped almonds but in the directions says finely ground. Which way do you like it best?

    I've never had white chocolate fudge but with these ingredients I look forward to trying it.
