Malted Milk Brownies

Chocolate malted milkshakes are one of my favorite drinks and the addition of malted milk powder to the batter makes these brownies super-rich with that malted milk soda fountain taste.

That's why I decided to take this brownie to the next level and the results in this batter which came out super moist and delicious!

The brownies can be frosted or left plain or even garnished with crushed malted milk ball candy on top for a crunchy topping.

The all-made from scratch batter is buttery delicious with unsweetened melted chocolate added, just a few steps and it surely is worth the extra steps over a boxed brand.

There is nothing better than a chocolate malt milkshake from the 1950s and these brownies will bring you down memory lane.

This super easy Blackberry Cobbler Cake has so many names you may be more familiar with cobbler, buckle, shortcake, whatever you name this it's a delicious dessert made with sweet fresh blackberries!

Sometimes we use other fruits instead of berries because this batter is so versatile and so simple you don't need to like baking or be a good one to make this dessert.

Growing up we went blackberry picking as soon as the season was in full bloom and berries grew wild in the fields in Utica, (my hometown in Central N.Y.) and were plentiful.

Another few favorite fruit desserts we love are Red Raspberry Pie and Red Raspberry Cobbler remains from my childhood some fantastic memories of my mom's baking.

Baked One Pot Stew London Broil Recipe is a delicious all-in-one pan meal and very versatile.

Mom would use whatever cut of meat was on sale in the 1960s and most of the time it was chuck roast however I prefer a nice cut of London broil also.

During the depression years, even grandma made this recipe but substituted chicken, pork, and sometimes even lamb on special occasions.

The wine varied from Chianti to Burgundy then and we also use Merlot of Cabernet in our recipe.

This recipe is easily adapted so feel free to use chicken or beef broth to substitute for wine.

Having so many berries in house this time of year, I had to experiment on using more than one kind in a muffin. I was extremely excited when my son who loves my blueberry crumb muffins said, wow these are awesome!~ He loves the combination of flavors.


I did several kinds of berries and made two batches. These were blueberry, blackberry and red raspberry.


These were strawberry, blueberry and blackberry.


This batter isn't very sweet. So then he suggested we ice these babies! I thought why not! Either way they were wonderful!




In a large bowl mix:
1/4 cup of sugar
1/4 cup of shortening till resembles course looking sugar

beat in :
1 egg

Add:
1 3/4 cup cake flour
3 teaspoons of baking powder
a pinch of salt
Alternate:
1 cup of milk to wet the dry ingredients.
Fold in one cup mixed of fresh blueberries, red raspberries or strawberries and blackberries
Line muffin cup pan with paper liners, fill to 3/4 full. Bake at 350 for 20 minutes.


In a separate bowl add 1 cup of confectionery sugar and water to make a thin icing. Drizzle over the tops of muffins while warm.

My favorite time of the year in Upstate NY is when the Italian Feasts would start, usually July -September. They have them at Mt. Carmel in Utica, St. Anthony's in Utica, Sons of Italy just to name of few of my childhood home town favorites as a child. We use to be able to walk to St Agnes Church feast, long since gone now.

Ocean Fresh Wahoo Fish Kebobs Recipe

Wahoo....wow what a great saltwater fish and delicious kind of seafood. Amazing texture, firm, white, mild-tasting wonderful fish. If you see this on a menu, try it if you like a firm white fish... it's one not to be missed!



                                 The marinade is lemon, lime with wonderful spices to accent its flavor.


                                                                  Grilled to perfection!




Fish is the main staple in our household, since we've moved to Florida, we have had Redfish, Spanish Mackeral, Mahi, Grouper, Flounder, Snapper, Sea Bass, Snook, Bluefish, Trout, Whitefish, Shark, just to name a few. We used  Haddock, Cod Salmon, Walleye, Perch, and Rainbow Trout in Upstate NY. So this was all new for me to cook. Now a friend of mine, Jim, that had given me Mahi, has now given me some Wahoo. So experimenting again with this firm fish, here is the marinade I used to make these kabobs.. this fish turned out fabulous!


1 lb of Wahoo Fish Cut into chunks or steaks
2 tablespoons olive oil
1 tablespoon lime juice
1 tablespoon fresh lemon juice and 1 fresh lemon sliced
1 tablespoon smoked paprika
1 teaspoon minced garlic
1/2 teaspoons finely ground fresh pepper
Cooking :
Whisk together olive oil, lime and lemon juice, paprika, and red pepper in a small bowl. Place wahoo in a dish. Pour the marinade mix over the fish, place in the refrigerator, and let stand for half an hour add sliced lemons on top. Remove wahoo from refrigerator, place fish on skewers or steaks directly on the grill and grill for 15 minutes on medium turning once at about 8 minutes. Use the leftover marinade mix to baste the fish while it is grilling. Serving suggestions on plain white rice or rice almondine marsala.

In Upstate New York Half moon cookies are very popular. I fooled everyone one day and brought some delicious homemade cupcakes over and frosted them with chocolate and vanilla frosting. Everyone thought they were half moon cookies instead of cookies! They all loved them. Moving to Florida I miss my hometown Utica, New York where these are popular cookies. In a pitch these bring back the hometown memories!
