3 Assorted Microwave Mug Cakes

Here are three delightful easy desserts made in the microwave called mug cakes.

We chose to make coffee cake, Amaretto chocolate cake, and vanilla cake and all 3 are terrific plain or dressed up with fruits, whipped cream, ice cream, or just a dusting of powdered sugar.

It’s not very often I use my microwave for anything other than heating up leftovers but these mug cakes are truly a delicious alternative when you're craving for something sweet.

Mug Cake Too Good To Be True


I won't lie and say these are better than any scratch-made cake, but in a pinch, they taste great and are doctored up with a few garnishes, they are really a treat!

Mug cakes are the perfect choice for kids at college and in a dorm with just a microwave, a quick easy homemade snack.

The microwave I have cooked right at one minute.

I have an 1100-watt microwave.

You will have to adjust the time if it's higher, I would stop a couple of seconds less.

Mug Cake Ingredients to always keep on hand

  • canola oil or vegetable
  • flour
  • sugar
  • milk (or used canned evaporated milk)
  • salt
  • unsweetened cocoa powder
  • vanilla extract
  • cinnamon and nutmeg for coffee cakes
  • optional: chocolate chips

3 assorted mug cakes for a quick easy dessert made in the microwave

Ingredients

  • Amaretto Chocolate Mug Cake
  • 4 tablespoons AP flour
  • 3 tablespoons brown sugar
  • 2 tablespoons unsweetened cocoa powder
  • 1/4 teaspoon baking powder
  • pinch of salt
  • 3 tablespoons milk
  • 1 tablespoon canola or vegetable oil
  • 1/4 teaspoon almond extract
  • 1 tablespoon semi-sweet chocolate chips
  • Serving Garnish:
  • Amaretto 1 shot more or less
  • drizzle with warmed hot fudge ice cream topping
  • whipped cream for garnishing
  • optional mini chocolate chips for garnishing

  • 2 tablespoons granulated sugar
  • 1/4 teaspoon baking powder
  • pinch of salt
  • 3 tablespoons milk
  • 1 tablespoon canola or vegetable oil
  • 1/4 teaspoon almond or vanilla extract
  • Coffee Cake Mug Cake
  • 4 tablespoons AP flour
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon cinnamon and a pinch of nutmeg
  • pinch of salt
  • 2 tablespoons milk
  • 1 tablespoon canola or vegetable oil
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon very strong brewed coffee

Instructions

  1. Directions for Amaretto Mug Cake:
  2. Lightly spray a microwave-safe mug, and stir in the milk, extract, salt, oil, brown sugar, flour, cocoa, and baking powder with a fork or small whisk.
  3. Stir in the chocolate chips into the batter.
  4. Microwave for about 1 minute depending on wattage up to 1 minute 10 seconds for over 1000 watt microwave. Cooking may vary.
  5. Adult Optional Garnish: with a shot of Amaretto first then ice cream or whipped topping and a little chocolate fudge sauce. You can also place this immediately onto a plate to serve or eat right from the mug.
  6. Directions for Vanilla Cake:
  7. Prepare a mug lightly oil spray and must be a microwave-safe mug.
  8. Whisk the flour, sugar, baking powder, and salt, into the mug and blend.
  9. Stir in the milk, vanilla, and oil, and mix evenly.
  10. Put the mug in the microwave on high for 1 minute and 30 seconds or until the cake is still springy in the middle to the touch.
  11. If it jiggles continue cooking in 4-second intervals each microwave wattage is different, start out with less time and add as needed.
  12. Note: allow to cool at least 4 minutes before eating, it's very hot!
  13. Serve with whipped cream and fresh fruit or eat as it is.
  14. Directions for Coffee Cake Mug Cake:
  15. Lightly oil spray a microwave-safe mug
  16. Whisk together. flour, sugar, baking powder, and salt, into the mug.
  17. Stir in the milk, vanilla, and oil, and coffee, mix until evenly combined.
  18. Put the mug in the microwave on high for 1 minute and 30 seconds or until the cake is still springy in the middle to the touch. If it jiggles continue cooking in 4 seconds intervals.
  19. Note: allow to cool for at least 4 minutes before eating, it's extremely hot.
  20. Dust with powdered sugar or make powdered sugar and water to make a thin icing glaze.
