Cheesy Potato Croquette Recipe
3 cups leftover mashed potatoes
3 tablespoons flour
2 tablespoons fresh chopped or dried parsley
1/2 teaspoon garlic powder granulated more for the tops
1/4 teaspoon black pepper
salt to taste
Italian flavored Panko bread crumbs or seasoned Italian style bread crumbs
1/4 cup grated parmesan cheese
olive oil for drizzling over the tops before baking
Optional suggestions to add: ( 1 tablespoon additions) Chopped onions, peppers, mushrooms, jalapeno's, shredded mozzarella, shredded cheddar. Also to make these even more spicy add 1 tablespoon hot sauce to the potatoes when mixing. A more savory taste? Add 1 tablespoon ranch dressing, sour cream or cream cheese instead.
Mix the leftover potatoes with the egg, garlic, pepper, parsley you can add more salt to taste if they weren't seasoned enough also add any of the the additions at this point. Using an ice cream scooper, take one scoop of the mashed potatoes and place into the panko bread crumbs that have been spread out on a plate. Coat both sides using your fingers to keep crumbs patted down on the sides and tops and place on a silpat mat or parchment paper using a spatula. When your done forming the croquettes drizzle with olive oil on top and more garlic powder lightly then bake at 350 degree hot oven until browned.
