Potato Salad Italian Style Recipe
5 or 6 potatoes boiled with skins on till soft, remove skins and cut into cubes when cooled
salt, pepper, cayenne pepper to taste
oregano dried to taste
good grade olive oil
3 tablespoons butter melted (per at least 5 to 6 cubed potatoes) add a tablespoon more for every two potatoes you add or use
3 to 4 tablespoons red wine vinegar or balsamic vinegar
Optional: 2 tablespoons chopped fresh basil, a few sprigs of fresh rosemary
Place the potatoes in large bowl. Drizzle the olive oil over the top of the potatoes, butter, salt and pepper, cayenne to taste in the bowl.. Drizzle with some vinegar of choice over the top. Add the herb evenly over the top and toss together.
Perfect side dish for anything you serve!
