Buffalo Chicken Bites Appetizer Recipe

Refrigerator dough with chicken and some cheddar.... can be a perfect appetizer for any gathering. But are you ready for that big game day or event? You will be with these because they are sure to please any buffalo chicken lover for something easy to make and less mess!
Check out this recipe for all my hot sauce lovers! We just love to snack on these and perfect to take to any party they travel and reheat perfectly!
 


2 packages (10) buttermilk biscuits
cooked chicken cut into small pieces
extra sharp cheddar cheese cut into thin slices
hot sauce extra for dipping if they love hot sauce
Other dipping suggestions
blue cheese, ranch dressing or melt sharp cheddar cheese for dipping



Take the refrigerated dough out the the containers. Flatten as thin as possible with the palm of you hand. Add to the top a piece of cooked chicken, drizzle with hot sauce, add some cheddar cheese and bring both side up together, crimp middles together to seal and put the folded side down on a cookie sheet either lined with parchment paper or place on a silapat mat.
Preheat oven to 400 degrees.  Bake them until golden browned 15 to 20 minutes.


Serve hot with blue cheese or ranch dressing or other suggestions above to dip in.

Greens and Beans Recipe


My grandmother Victoria who past on at the age of 92 back in 1975, (October 4th to be exact) made this at least once a week in the winter time. Not many ingredients fed the whole family. The aroma came from the sauteed garlic and olive oil that infused the 



greens and beans that soon would be bursting with flavors.
Escarole and beans, greens and beans, an East Utica staple and now a delicacy, that was once a depression food on it's low cost to make. Not easy to find anywhere in a restaurant unless your in Upstate New York my hometown of the best Italian cooks in the world to me. This is often served over hard crusted Italian bread.

Jack Daniel Chicken Kabob Recipe

This sauce taste great on just about anything!  It's one of my son Curt's specialities. So make sure if you want the Jack Daniels Barbecue Sauce Recipe   you hop over and visit Curt's blog. This the best sauce I have ever had for grilling or baking.  These kabobs were a big hit at our 4th of July party in years past.  It's my go to recipe from now on! Perfect for game day if you can't grill out because of your climate that's ok! Put them on oil sprayed foil and add a touch of liquid smoke to the sauce that will get you that grilled  smoky taste in the winter time! This is a treat and if your cooking for a crowd sure to please every time and makes you think of summer fun all year round in the chillier weather!

4 boneless chicken breasts cut evenly into cubed (use beef sirloin if you rather have steak)
Pineapple chunks
cubes of bell peppers
other suggestions: whole mushrooms, zucchini chunks, tomatoes or eggplant chunks, onions,
wooden skewers soaked in water for at least 30 minutes (that prevents them from burning)

Heat the grill on medium or bake as directed above on 425. Thread the cubes of chicken alternating with peppers and pineapple chunks or other suggestions above. Grill on each side around 4 minutes. Top with the barbecue sauce 5 minutes before the chicken is cooked all the way through.

Baby Shower Recipe Ideas and Antonio


Here is a roundup of ideas for your future bundle of joy. If you know the sex of the baby you can tint icing, white chocolate or even whipped cream to the babies theme for all any occasion or event.
 These are some of the contributions I made for family and friends baby showers over the years and now for our future new grand baby. We welcome our first grandson who happens to be the son of my baby boy +Curt Iffert  from Curt's Delectable Creations  and his fiancee +Jennifer Carman . The baby is due in just a few more weeks! Being my first grandchild, we are preparing for this blessed event with excitement,
 so I dedicate this blog post today to you

Purchase a bag of mini pretzel rods. Melt your chocolate dip one end. Using white chocolate melted, add the coordinating theme color food coloring. Swirl colored white chocolate onto dried dipped chocolate pretzels and sprinkle colored sugar on them while still wet.



Use a fudge marble cake mix but tint half the light batter with the color of  your theme. Put the chocolate batter in the bottom of your cupcake liner first then top with the tinted color. 
Bake per directions on package and decorate.

Buffalo Chex Mix Recipe

A recipe that has gone around and around, I can't get enough of homemade. One thing we just love in ours is a special tasting cereal that is our favorite secret ingredient making it our own.

4 cups chex cereal or mini shredded wheats
4 cups peanut butter Captain Crunch cereal
2 cups cheese cracker squares or other shaped cheese crackers like goldfish
2 cups pretzel nuggets, sesame sticks, or other pretzel shape
1 stick melted butter
1 cup peanuts
2 1/2 tablespoons hot sauce
1/4 teaspoon garlic powder
1 teaspoon Worcestershire sauce



In a small microwavable bowl, microwave butter uncovered on HIGH for about 40 seconds or until melted. Stir in hot sauce and spice and sauces. Pour over snack mixture mix using a square glass casserole style dish mix until evenly coated.

Microwave uncovered on for 4-5 minutes, stirring every minute.  Spread out on cookie sheet to cool. Store in an air tight container if it lasts!

Italian Mini Rollup Pinwheel Recipe


A perfect little appetizer you can build with whatever you like these are Italian Style flour tortilla roll up mini's. I have a variety of fillings and use these for game day, baby showers and any event that needs to come together quickly with food ideas.



1 package of 8 or 10 flour tortilla homemade or store bought
assorted thinly sliced lunch meats ( pepperoni, salami, cappicola, mortadella, prosciutto, roast beef)
fancy greens, romaine lettuce or spinach leaves
thinly sliced provolone,  mozzarella cheese or your favorite balsamic vinegar and olive oil mixed together with chopped fresh basil,  oregano, salt, pepper and a pinch of granulated garlic powder or used fresh (you can use bottle Italian dressing if you like)

Take on tortilla and layer 1 slice of each meat with at least 3 pieces either all the same of different mine is a mixed cold cut. Then add the cheese, top with a few leaves of lettuce. Drizzle lightly with dressing. Tuck side in, roll tightly. I wrap them in plastic wrap for a few hours. Then take them out and slice around 2 inch thick cuts or less. Place on a serving tray or if traveling stack with wax paper in between when layering them in a covered container.


Other filling ideas:
Egg  salad, chicken salad, buffalo chicken shredded, ham salad, tomatoes and mozzarella with lettuce, crab and shrimp salad, tuna salad. Bacon lettuce and tomato with Turkey.

I am sure you can great creative, I also love avocado, cucumber, tomato and lettuce with feta cheese.

Candy Sugar Mold Recipe


You can make many cute decorations using sugar art. I love it for the ease. There is really nothing on mastering this easy art work and you can turn ordinary cakes into the perfect theme or event you need in minutes if you have molds that go into the microwave read on. This one is going in the middle of a blue ambrosia salad for my baby shower.
Ambrosia Salad in blue with colored mini marshmallows,
also with tinted blue coconut.



1 cup sugar
1 tablespoon water (do not use more water it is suppose to look like moist sand)
candy molds
food coloring of choice and  flavoring oils
lollipop sticks if using the mold I have

Add the sugar to a bowl with 1 drop of coloring to the tablespoon of water (and 1 drop of flavoring oil is using) add more drops depending how dark you want this. Stir or shake in jar until well blended together.
Use a spoon to fill and pack down the sugar into the molds. If making the stick before adding the last layer of sugar over the top check the opposite side of the mold to see if the stick shows through lift the stick up towards you slightly and fill again packing down firmly. Scrape off any access sugar around the edges of the molds. Now there are two methods of drying.
 The first one is to dry the sugar overnight or over a few days. The second method is if you have purchased microwave safe molds( as I have) then microwave every 30 seconds around 3 times depending on how large the molds are (2 times for small ones,) resting in between for a minute, then microwave 30 more seconds. Cool briefly and see if they are rock hard in to the touch, if so then try and pop them out then dry completely.

I use the molds that have a place to add a stick which are lollipop molds and I use them to stick in cakes or cupcakes for the cutest themes and decorations.

You can purchase most molds at the dollar store or party stores and make pretty molded sugar cubes with them.

Great for baby showers and weddings, school projects or just because you want heart shaped sugar cubes to go into your coffee. Just decorate your favorite shapes by piping some frosting, adding some mini chocolate chips for the eyes and your done! Decorate for all occassions in coordinating colors for all your food projects.

The great thing about sugar cubes is if stored properly you can really keep them indefinitely!  Have fun....

Skillet Italian Vegetable Saute Recipe

Fresh Vegetables with garlic and olive oil and a splash of Marsala. Perfect over cooked rice or pasta. Just remember to keep it the healthiest, eat this without carbs and add as much of the vegetables you like in this pan.
Make as much as you need for your family here is for 2

1 bell peppers cut into strips
8 oz of fresh mushrooms
1 bag fresh spinach washed or (1 head of escarole boiled and drained)
1 8 oz bag of broccoli florets
1 zucchini cut into cubes
3 tablespoons olive oil
2 teaspoons minced garlic
red pepper flakes
Marsala wine
grating cheese
salt and pepper to taste

Optional to serve with:  cooked rice, boiled penne pasta or over hard crusted Italian bread.

Optional meat: Add 1 cup of either cooked Italian sausage, cubed cooked chicken or sliced cooked steak.
Other vegetable suggestions: green beans, carrots, artichoke hearts, onions, tomatoes, shredded cabbage and other greens you like.

In a large non stick fry pan, not heated, add the oil, garlic and wet spinach, saute add red pepper flakes until wilted. Once wilted, add all the cut up vegetables and saute for around 6 to 7 minutes (unless you like them very soft, then continue to saute to your likeness.) Add a little more olive oil if it started to get too dry. Options:  Drizzle with 2 tablespoons of Marsala. Stir to blend. Serve over Italian rice. Top with grated romano cheese.

Sausage Peppers Mushrooms and Tomato Casserole Recipe

Here is a throw everything together in one pan meal for the busy cooks and anyone who loves sausage and peppers in a sandwich or over pasta. This easy casserole is the start of many meals. You can use leftovers as a topping for baked potatoes, to make meat Stromboli,  baked on top of pizza dough. Other suggestions would be in a sandwich or just plain hard crusted Italian bread, even over rice, your favorite pasta, on top of mashed potatoes, nice crusty Italian bread and I know  you get the idea.




Take a look at these great ingredients add more or less of what you like and adjust to your family size for quanities.

Sausage Peppers Mushrooms and Tomato Casserole
Italian sausage around 8 links cut in half (Try mom's homemade recipe)
4 or 5 sliced cleaned green bell peppers
1 pound of sliced mushrooms
2 teaspoons fresh minced garlic
2 leaves chopped of fresh parsley
1 pound whole tomatoes pulsed in the food processor leaving chunks
1/2 cup Burgundy wine or water
4 tablespoons olive oil
3 or 4 fresh basil leaves
salt, pepper, to taste
a few red pepper flakes for more heat if you like
oregano dried season to taste
grating cheese
Optional: sliced onions and shredded mozzarella cheese



In a large baking pan place sliced peppers, mushrooms, tomatoes,wine, spices, salt and pepper on the bottom. Add the sausage to the top. Drizzle with olive oil. Sprinkle top with more seasonings and herbs, salt, pepper and grating cheese. Add the mozzarella if using on top last. Bake on 400 for around 35 to 45 minutes. Serve as suggested above.

Optional note:
You can also add thinly sliced potatoes and green beans to this but some of the options above will not work using this version as a filling if there are any leftovers.

Pigs in a Blanket for Baby Showers Recipe Video



One the most popular appetizers out there and now the cutest little creations are these delicious little pigs in a blanket. These are just perfect for a baby shower. Here is just a quick idea to add to that future bundle of joys baby shower that will be the easiest of all appetizers to make and everyone got the idea when they saw them. Of course you can just wrap them anyway you want to whatever theme it may be to be creative like halloween for mummies, football shapes etc.







Pigs in a Blanket Diapers wraps!

1 package of hotdogs (8 are in that package) cut in bite size pieces to fit 40 pieces of dough see video for more instructions

2 packages of refrigerated biscuits cut in half (they come in a package of 10 so cut in half) this will make 40 total

After you cut the hotdogs to fit the 40 pieces. Take a piece of dough and using the palm of your hand press down to form a circle. Place the small bite size piece of hotdog in the center with part of the top over the top of the dough showing. Fold the bottom (which is the center of the dough) up the middle of the hotdog bite, then one side at the time to meet in the middle forming how you would put on a diaper.
Brush with eggs whites or egg yolks beaten on top to seal.
Bake in preheated oven on 400 degrees until browned around 10 minutes.
That's it!

Chuck Steak Vegetable Stew Recipe

In cooler weather I always wants something that sticks to your ribs so to speak and satisfies my hunger. Chuck Steaks are an economical steak that are delicious when slowly cooked in a stew. I didn't cut them into pieces and left them whole.
A little more fat and of course and more flavor than round steak which is lean and used for braciole
These chuck steaks came out delicious and tender in this vegetable one pot stew!


8 - 4 inch chuck steaks
olive oil
3 cloves minced garlic
1 - 28 ounce size can tomato sauce
1/2 cup Cabernet Wine
2 cup sliced green beans
1 cup sliced mushrooms
8 small whole potatoes peeled
1 cup sliced carrots
2 extra large bell peppers any color I used yellow and green
garlic powder

In a large sauce pan with a lid, add 3 tablespoon olive oil and heat the pan. Add the chuck steaks and saute both sides for around 2 minutes each on medium high heat. Add the garlic saute for a minute, do not brown garlic. Add the tomato sauce, Cabernet, peppers.  beans, carrots, mushrooms and potatoes. Bring to a boil. Simmer for around 1 1/2 hours on low or until meat is tender. If liquid starts to get low, add some water. At the end add fresh basil, parsley, salt, pepper to taste. Sprinkle lightly with garlic powder around 1'/2 teaspoon.and the same for dried oregano.  I also like to add a dash of cayenne pepper which is optional.

Split Pea Cabbage and Ham Soup Video Recipe

This is a hearty soup packed with flavor and lots of leftovers after the holidays. I love to make soups of all kinds, I never imagined how great cabbage went with split peas until now. This is a keeper for us. Very easy to make and we love simple throw together recipes like this one and the cabbage with ham really compliments the peas perfectly in this soup and very inexpensive to feed a whole family with a home cooked meal in one pot!

Split Pea Cabbage and Ham Soup



Half of a head small cabbage chopped in pieces
1 pound bag of dried split peas washed and sorted

 NOTE: (I actually used a whole 16 ounce bag which makes a very thick rich soup fully packed with peas, if you want less peas or less thick of a soup I would cut it down to 2 1/2 cups) I had to keep adding water until they cooked and the soup gets nice and thick but fabulous!

use a handful of finger carrots or 1 cup sliced carrots
1 or 2 stalks of celery left whole and removed after cooking
ham bone or 1 cup cubed or sliced ham pieces (or see option below)
water
salt, pepper to taste
1 teaspoon garlic powder

Optional: add 2 or 3 cubed potatoes

Option over ham:   boil 2 boneless chicken breasts with the peas and it will make a great broth, then after the chicken is cooked cool, cut chicken up in small pieces and place back into the pot.

In a 5 quart sauce pot,  place the cleaned and sorted split peas in the pot fill with water leaving space of two inches from the top. Add the chopped cabbage, celery, carrots and ham and garlic powder.

Simmer for around 1 1/2  hours (or more depending how much vegetables your adding) on medium heat adding more water when it boils down too much and until the cabbage and peas are soft.  (I had to add water twice when using the whole bag of peas around  to the same level 2 inches from the top of water at a time until everything was cooked soft.) The soup will thicken as it cooks down perfectly by the peas.

Best EVER Tempura Batter Recipe with Video

In case you weren't sure what tempura batter is,  it's a light crisp batter that is perfect to coat fish, chicken or any other meat or vegetable you like. After it's fried then saturate them by using a favorite dip or sauce of your choice.
If your looking for a light crisp batter, look no more.

Tempura Batter:

1/2 cup flour
1/2 cup cornstarch
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon sugar
1/2 teaspoon sea salt
1 egg
2/3 cups ice water
oil for frying
1 pound cleaned shrimp, scallops, lobster chunks or bites size pieces of any white fish

Dipping suggestions:
Try your favorite Hot sauce for dipping with blue cheese dressing or
Your favorite sauce Sweet and Sour Asian Style Sauce see all recipe suggestions below.


Whisk all dry ingredients together, set aside. Beat in another bowl the egg and ice water. Stir into the dry ingredients stir until mixed (will be lumpy)



Heat the oil on medium high heat. Dip fish into the batter and deep fry. Place on paper towels to drain.


Buffalo Hot Sauce for dipping:
1 cup hot sauce or wing sauce of choice
3 tablespoons melted butter
1/2 teaspoon garlic powder
pinch of cayenne powder (optional)
1 tablespoon blue cheese or ranch dressing
Mix together.

Serve the fish with hot sauce on top and a side of blue cheese dressing for dipping.

Blue Cheese Dressing:
3/4 cup sour cream
1/2 teaspoon dry mustard
1/2 teaspoon freshly cracked black pepper
1/2 teaspoon sea salt
1/2 teaspoon garlic powder
1 teaspoon Worcestershire Sauce
1 1/3 cups mayonnaise
6 ounces of crumbled blue cheese

Beat everything together until smooth except blue cheese for around 2 minutes, fold cheese in at the end, best served after 24 hours refrigerated. Store unused up to one week.

Asian Style Sweet and Sour
3/4 cups sugar
1/3 cup white vinegar
1/4 cup soy sauce
2 tablespoons ketchup
2 tablespoons cornstarch
2/3 cup water
Place the water in cup with cornstarch and mix. Add the rest into a saucepan and bring to a boil until thickened.

Apple and Raspberry Pie Recipe



Apple pie just shouts comfort during the cooler weather especially the aroma while it's baking. So you may ask why raspberry?  I always put a little cinnamon in my raspberry pies and it taste great, so then I thought why not combine both apples and berries this time when making my pie and it gave it that festive look for the holiday tables. This was a great hit and totally delicious especially with a scoop of vanilla ice cream or whipped cream!

I thought the leaves gave it a fall festive look,
you can buy at any specialty store.


For the Crust that makes top and bottom:
 
Mom's Crust:
2 cups flour
1/2 teaspoon salt mix together with flour
2/3 cups shortening cut into the flour then add
4 1/2 tablespoons ice water
extra flour for rolling.
Mix till dough forms a ball...Roll out on floured board two 9 inch crust and line pie plate.
Brush bottom of crust with 1 tbsp melted butter.

Apple pie/raspberry filling:
 
Peel, core and slice into thick wedges 5 baking apples I used McIntosh.
 
1 cup fresh red raspberries washed if using frozen or canned pat dry.


 In a bowl add
1/4 cup of flour
1 teaspoon lemon juice
 1 to 2 teaspoons of cinnamon to your taste
1/4 cup of water
3/4 cup of sugar

 Mix in apples, fold in the raspberries all together tossing lightly.

Roll 1/2 the dough out to fit your pan. Pour apple mixture into bottom crust. Roll out remaining dough to fit the top. Dot with slices of butter.  Sprinkle with 2 tablespoons of  milk and a mixture of 1 tablespoon of granulated sugar mixed with 1/2 teaspoon cinnamon over the top of the whole pie. If using the leaf cutters, use some of your leftover dough scraps to make them and place randomly on top of the sugar coated crust.  Bake at 400 until lightly browned . Cool and slice. Serve with vanilla ice cream or whipped cream or leave  plain.

Best Leftover Rice Recipe EVER!

If you have plain leftover rice you can transform it into a delicious side dish. Read on to see how you can make a great meal with a few ingredients you may have in the house.
 
 
 
Best Leftover Rice Recipe EVER!
 
2 cups leftover rice or freshly made
1 zucchini cubed
sliced grape tomatoes cut in half around 8 to 10
corn leftover off the cob or frozen
leftover cooked meat like steak, pork or chicken around 1 cup
garlic, onions, minced to taste around 1 tablespoon each
1 egg
2 to 3 tablespoons olive oil
1 tablespoon butter
cayenne pepper, black pepper and garlic powder to taste
soy sauce
 
In a large fry pan, melt butter and then add the 1 egg on medium heat, stir until egg is scrambled and set. Add the rice, zucchini, garlic, rest of the oil,  onion and sauté until rice is browned stirring continuously on medium heat. Add the corn at the end with cooked meat.  Stir in grape tomatoes. Add the spices to taste.
Add 2 tablespoons soy sauce and 3 tablespoons water. Stir and serve.
 
Other suggestions 1 cup of any combination below added to the zucchini step:
 
Sliced mushrooms
Julienne carrots
Shrimp and scallops or other shellfish substitute instead of meat
Fresh spinach
Chopped celery
Sliced green bell peppers
Artichoke hearts
Snow peas
Water chestnuts
Shredded cabbage
Cubed eggplant
  
Nuts can be added too,  such as sliced almonds around 1/2 cup.
 

 

Meatball Parmesano Pizza Recipe

If we ever have leftover Meatballs which is usually not the case in our house,  this is a great way to make another fantastic meal with those leftovers! We have made submarine sandwiches as well with leftovers meatballs but who doesn't like pizza? Honestly I have to make a batch just for these reasons. Covered sandwiches and pizza. Starting with homemade long simmered meatballs, then making the fresh dough, cheese and meatball topping this becomes a whole meal in itself! A small antipasto on the side and vino you're good to go! We never let leftovers go to waste in our home,  there is always another plan to recreate another way to use whatever we have into another meal!


Here is all you do:

Starting out you will need meatballs cooked and in sauce.

The rest is easy use these ingredients as much as you want:

Sliced Meatballs in sauce or sausage leftover
Whole milk shredded mozzarella cheese
Grated Pecorino Romano cheese
Optional suggestions:  Sliced garlic, fresh basil, dried oregano or fresh if you have it and red pepper flakes
Olive oil
Optional : sliced peppers, mushrooms, sausage, black olives

Stretch out the dough on a deep dish greased pizza pan ( I use Crisco). Let rise until doubled. Bake on 400 degrees until browned around 25 minutes. Remove from oven. Sprinkle with olive oil on both side.
Top with sliced meatballs and lots of grated parmesan cheese, sliced garlic and any other toppings. Add a generous amount of whole milk mozzarella cheese and bake again on 400 degrees until cheese is browned and bubbling. Sprinkle with dried oregano if using or fresh basil. I sprinkle more grating cheese on mine and pour some hot sauce on top. My pizza slice looks like a covered open face sandwich!  Cheers!
