Homemade Sausage and Mushroom Slider Recipe




I just love making homemade sausage and these sliders with sauteed mushrooms are just over the top great! I will give you even more suggestions for toppings at the end. The sausage alone is amazing in flavor and you will never buy store made sausage again. Check out my mom's recipe!



You will be amazed on how easy this is to make yourself and stop buying the sausage in store. Mix it, shape and grill!

Sausage and Mushroom Sliders


Slider buns
Sliced fresh mushrooms (buy enough for the amount you need for each slider)
White wine
Butter, olive oil 
Salt, pepper, 
2 minced garlic cloves

In a small fry pan add 1 tablespoon butter and 1 tablespoon olive oil. Add the minced garlic, salt, pepper to taste and mushrooms. Saute for around 3 minutes then add around 1/2 cup white wine. Cook down until half the wine is gone. Set aside
Fire up the grill. Make the amount of fresh sausage patties you want and grill until sausage is thoroughly cooked.
Toast each slider bun on the grill. Add the cooked sausage on the bun, top with mushrooms. Great alone or with steak sauce.

Options for toppings:
Mozzarella cheese slices
Fried or roasted peppers
Chopped black olives
Sliced plum tomatoes
Sauteed onions

Microwaved Smashed Potato Recipe

Enough potatoes for your family (2 potatoes feeds 2 people and this recipe is for 2)

Add 2 tablespoons for each:
Milk
Butter

Add to taste:
Salt, pepper

Granulated garlic (around 1/2 teaspoon)

Add 1 tablespoon each:
Grating cheese 
Chopped parsley for garnish

Optional: add 1/2 cup shredded fontina cheese or any good melting cheese.

Microwave your potatoes until cooked with peels on them. Cool until easy to remove peels. Place the whole potatoes in your baking dish, add milk, butter, salt, pepper, granulated garlic and grating cheese. Using a fork mash them down leaving chunks. Serve hot.

Grilled Cheese and Capicola Roasted Pepper Sandwich


Melted provolone cheese or mozzarella with hot capicola and peppers. I love roasted peppers on this sandwich. Amazing how the easiest things taste so good! Not hardly a recipe but more than satisfying any day of the week!



Here is all you need:

Hot Capicola 
Italian sliced bread
1 jar of roasted pepper or homemade
Provolone slices or mozzarella
olive oil
granulated garlic

Heat a griddle or panini pan on medium heat. Brush both sides of your Italian bread with olive oil.
Place 1 slice of bread on the grill with 2 pieces of cheese of choice on that slice then add 3 slices of hot capicola on the bread. Add the peppers. Top with another slice of bread that has been brushed with olive oil. Sprinkle with granulated garlic on both side and then grill until cheese is melted flipping once.

Roasted Vegetable Medley Vinaigrette


Hot or Cold this vegetable salad is bursting with garlic, oil herbs and spices. I personally could eat this everyday. Everything about roasted vegetables with this homemade vinaigrette dressing makes me crave this again and again.


Roasted Vegetable Medley Vinaigrette

1 teaspoon finely minced garlic
1 tablespoon minced fresh parsley
Zest of 1 lemon
Juice of 3 lemons (1/2 cup total juice)
1/2 cup extra virgin olive oil
1 teaspoon kosher salt
1 teaspoon honey
Few dashes Tabasco sauce  
Pulse in blender  making a smooth vinaigrette,  garlic, zest and juice of lemons, salt, honey and Tabasco. Turn blender on low and slowly drizzle in oil until well blended. 
Set aside. 

Roasting Vegetables below

Assorted roasted vegetable suggestions:  ( click here to get recipe for roasting and see how) 2 10-inch zucchinis or 2 10-inch yellow squash, brussels sprouts, green beans, broccoli, cauliflower, eggplant, peppers are a few suggestions  we use a medley. Cook using the instructions link above. 


Serve by tossing the cooled roasted vegetable in the vinaigrette dressing. Top with options below. Serve hot or cold

Optional Additions:

1/3 cup toasted pine nuts, pecans, walnuts or  blanched slivered almonds, toasted and cooled
1/3 cup diced fresh basil
 Homemade croutons (click here for the recipe)
1 cup assorted small chunks of fresh mozzarella, grape tomatoes, garbanzo beans, avocado chunks, added to the  cooled roasted vegetables.

Anytime I make brownies I need to step it up with a little gourmet surprise inside. Who doesn't love their favorite childhood cookie hidden in rich chocolaty brownies? This is such a decadent brownie. Rich with a favorite cookie inside them and are tops in our household. The cookie inside is what makes these brownies over the top! Bursting with chocolate and peanut butter is the perfect combination and makes them a wow factor. The chocolate frosting just puts 
them over the top indulgent!







Nutter Butter Stuffed Brownie Recipe

1 box of your favorite brownie mix made to package instructions (family sized box)
Nutter butter cookies
1 can frosting chocolate
peanut butter chips
chocolate chips (optional) for garnish

Mix the brownie to instructions and prepare the brownie sized pan lined with parchment paper. Pour into your prepared pan. Place broken halved nutter butter cookies evenly over the batter and press into the brownie mixture. Sprinkle evenly with peanut butter chips. Bake at 350 degrees until the middle is set and come clean using a toothpick about 35 minutes.

Cool completely and frost with chocolate frosting.

Optional:  sprinkle top with chocolate chips.

Shrimp Scampi with Pasta and Spinach Recipe


I love shrimp and everything in this dish. It fast and easy and if you're a seafood lover, you just hit the jackpot! We love this one especially when you're in hurry and want to throw a great meal together quickly.  For those of you that aren't seafood lovers substitute boneless cubed chicken breast it's terrific with chicken too! Also add a little heat to it with a few tablespoon of hot sauce!



Shrimp Scampi with Pasta and Spinach Recipe
1 pound baby spinach
1/2 cup white wine
1/2 cup chicken broth or water or vegetable broth
1 tablespoon minced garlic plus 1 teaspoon granulated garlic
1/4 cup olive oil
2 tablespoons butter
salt, pepper and red pepper flakes to taste
2 tablespoons chopped fresh parsley and basil
grating cheese

1 lb linguine or your favorite pasta cooked to package instructions 
(cook 15 minutes before shrimp mixture is completed) drained
2 pound of cooked shrimps with tails on not frozen (it's just for presentation take them off if you wish) or sauteed boneless breast chicken cubed

Optional: pinch of cayenne pepper and Italian flavored bread crumbs sauteed in butter see below.

In a large fry pan add butter, 1 tablespoon olive oil, stir in the garlic and sauté 1 minute. Add the wine, chicken broth,  spices, rest of the olive oil and spinach. Cook until the spinach is wilted. Add the shrimp cook until heated around 4 minutes. Add the fresh herbs and cheese, sprinkle on top of the pasta. See below for second option.

Optional topping:
In a small fry pan saute 2 tablespoons butter and 1/4 cup Italian flavored bread crumbs. Stirring until golden brown. Stir in the grating cheese add as a topping for this dish.

Italian Sausage Chili Recipe



I love a hearty dish and this is all of that and more. This one is loaded with ground sirloin and Italian sausage. The sauce is slow cooked. Pasta is cooked separately and mixed in this delightful dish after that slow simmered sauce is completed!




Italian Sausage Chili Recipe

1 1/2 pounds Ground Sirloin Beef or Ground Round
1 pound Sausage links cut into slices
1 28 ounce can Diced tomatoes
1/2 cup Merlot wine
1 12 ounce can Tomato sauce
2 cloves minced Garlic
1 teaspoon granulated Garlic
2 bell Peppers sliced
Salt, Pepper Cayenne
2 cans Beans drained and rinsed (white, red or black)
Olive oil
Reggiano grated cheese
Pasta of choice (baby shells, ditalini or elbows is suggested)

In a large saucepan add 1/4 cup olive oil saute the meats with the peppers adding the garlic to cook last when the meat is almost cooked. Pour in the tomatoes, tomato sauce, wine and stir. Add the beans, salt, pepper, granulated garlic and cayenne if using. Simmer around 1 hour or until it thickens into a nice hearty sauce.
Boil your favorite pasta to package instructions. Drain pasta and place into the pot of sauce before serving.
Ladle into bowls and sprinkle cheese on top.

Italian Baked Chicken Recipe


Delicious oven fried chicken with all the right spices that make that crispy skin so perfectly seasoned. This is one of those quick and easy recipes that we make often because after you eat it this way the family will ask for it again and again! It's healthier version and I promise it really taste fried!


Italian Baked Chicken Recipe

4 to 5 pieces of bone in thighs, breast or legs and even a combination 
combination of vegetable and olive oil 1/4 cup mixed (or use canola oil if you prefer)
minced garlic around 2 tablespoons
2 tablespoons chopped fresh parsley or 1 tablespoon dried
salt, pepper to taste
Italian flavored bread crumbs (panko works the best but whatever you have is fine)
grating cheese Reggiano Romano or use any Italian style grating cheese
granulated garlic
dried oregano

In a large bowl add the chicken, 1/4 cup olive oil and toss to evenly coat. Add salt, pepper, minced garlic, parsley and stir to coat evenly. 
Place the chicken in a greased disposable aluminum pan or deep baking dish lined with parchment paper. 

Since I love garlic so much I like to add more of the granulated on top of the chicken.


Sprinkle the tops of the chicken pieces with bread crumbs, grating cheese, granulated garlic and oregano evenly all over.

Bake in a 400 degree hot oven until chicken is nicely browned and crispy skin around 45 minutes. 

Note:  I do not turn the chicken over during baking

Slow Cooker Chicken Cacciatore Recipe


If you have loads of time and not working, everything can go into a huge dutch oven on the stove top. However I don't have that luxury of staying at home. I love this dish but not crazy about chicken looking like it's boiled after it cooks in a slow cooker. Here is the remedy for the best slow cooked cacciatore I have ever had. Just make sure you but a great loaf of Italian hard crusty bread to sop up this delicious sauce!


Step #1 fry the chicken pieces until nicely browned on both sides!

 Slow Cooker Chicken Cacciatore Recipe


8 to 10 chicken pieces bone in ( I used legs and thighs)
3 bell peppers sliced
8 plum tomatoes pulsed to a diced size
3 cloves minced garlic
1 can 16 ounce whole tomatoes with basil added pureed in the food processor
olive oil
1/2 cup white wine ( I used Pinot Grigio)
salt, pepper, cayenne pepper or red pepper flakes, oregano, parsley

Optional:  I throw in a can of peas of cut green beans for an additional vegetable at the end of cooking.  Also I add a handful of finger carrots for sweetness

Fry the chicken pieces until nicely browned on both side and season to taste.

In a large enough slow crocker to accommodate the chicken pieces, add the tomatoes, wine, herbs and spices and garlic ( onion if using) to the slow cooker. Top the chicken with peppers and any other vegetables you would like except peas, add them 1/2 hour before the chicken is done.  Slow cook this for 6 to 8 hours. Serve with crusty Italian bread and an antipasto salad.

Note: I used a 7 Quart Slow Cooker,  5 will work just fine also

Guinness Beer Sauce For Grilled Ribeye Steaks



Seriously, this is one delicious marinade just in time for St. Patrick's Day. Of course if you have to have your corned beef not steak then go ahead and make my slow cooker corned beef  in Guinness from last years post. This is sure a nice option if your not a corned beef lover. Here is one that you will make over and over again. The flavors are wonderful and make the steak tender and still juicy even when it's over cooked. Give it a try.



Guinness Sauce/ Marinade


(I double this recipe)
1 cup Guinness beer or other stout
1/2 cup chopped peppers we like hot but you can use any kind you like
3 cloves minced garlic
1/3 cup soy sauce
2 tablespoons molasses
1 tablespoon fresh chopped rosemary
1 tablespoon Worcestershire sauce
2 rib eyes or whatever you like

Place steaks in a large zip lock bag with all the rest if the ingredients. I marinate this overnight, or if you work,  get it  going for marinating in the morning and it's ready after 8 hours.

Take the steaks out of the marinade and  save 1 cup placing in a small saucepan (2 cups if doubling) throw the rest away.

Preheat your grill and cook your steaks by your own preference. We like them medium so it's around 7 minutes on each side.

In the meantime boil the reserved marinade in the saucepan and reduced in half 7 to 10 minutes. Use to dip you steak in or pour on top of each one.

Italian Roasted Potato Recipe


I think these were served at every Italian wedding in Upstate N. Y.. These were always on the menu. Matter of fact they would not last long and the first thing to need refilled. Even at the family dinners these would always be requested. One of the easiest recipes I have to post and they never disappoint the family gatherings!


Italian Roasted Potato Recipe

olive oil
yellow potatoes cut up in wedges or in half if small
dried parsley
fresh rosemary
salt, pepper
granulated garlic
grating cheese Romano reggiano
optional: cayenne pepper for heat or red pepper flakes

Cut up as many potatoes you need.  Place in bowl drizzling with olive oil. Add salt, pepper  to taste and around 1 teaspoon or more to taste of granulated garlic. Toss to coat evenly with olive oil.
Spread on a cookie sheet lined with parchment paper or heavy greased and oiled pan.
Sprinkle with cheese, herbs, spices and hot pepper if using.

Bake at 420 degree hot oven until browned and crispy around 1 hour turning a few times. Check for doneness with a fork that they are easily pierced.  Skins should be crispy. I also broil them around 4 minutes turning to get them a little crunchier.

Baked Herb Asian Chicken Recipe

 Asian style chicken will be the hit on your tables.Here is a easy flavorful chicken perfect for baking or on the grill. Marinate for tenderness and this will be a delicious chicken baked or grilled. Using stir fry sauce or oyster sauce makes this very tasty!


Marinade:
Baked Herb Asian Chicken Recipe
4  tablespoons Lime Juice
3 tablespoons Olive oil
1 teaspoon garlic powder
2 tablespoon soy sauce
1 tablespoon brown sugar
1/2 cup oyster sauce
salt and pepper to taste
1 tablespoon Parsley and 1 tablespoon Oregano
Legs and Thighs, wings or breasts

Optional: Before cooking top with sliced mushrooms, pineapple rings and slices of bell peppers. 

Mix the parsley, oregano, lime juice, garlic powder, soy sauce, brown sugar and olive oil in a large freezer bag and add the chicken pieces around 7 to 8 pieces.
Marinade for 3 hours or overnight.  Before cooking, baste with  oyster sauce and sprinkle generously with salt and pepper to taste.  Place on a greased cookie sheet or aluminum pan. You can also grill during grilling season. Bake at 400 degrees until juices run clear around 35 minutes. Serve with jasmine rice or any kind of rice you like.

Roasted Peppers Pepperoni and Egg Recipe



Roasted peppers, pepperoni,  eggs and provolone is a great combination for breakfast, lunch or dinner. It's even great in a sandwich. I love the flavors melded together. Anyone who loves Italian food will appreciate this one. When we were growing up this was a treat for us and made on someones birthday or special times. Today we are fortunate enough to afford all of the ingredients to eat this when ever we want but back then in the early 1960's it was tough with money. Using only stick style pepperoni, this would be peeled and sliced fresh then added to the eggs. I still will always make this the same way today, not using pre sliced kind in a package. Everything is freshly made. This is especially delicious in my wonderful memories of those great times with my Mom making this, I sure do miss her lots. She would pack this sandwich for us when we would head to the Saratoga race track for the day. I couldn't wait to eat lunch or summer when we would head off for our day together, great times, great food and the best memories!
Of course ours was between two pieces of  freshly made crusty Italian bread still warm from the bakery. Delicious!


Roasted Peppers Pepperoni and Egg Recipe

4 eggs cracked in a bowl
1 sliced pepper roasted packed in olive oil and whole garlic or use more if you want!
2 slices provolone cheese
grating cheese Romano to your taste
salt, pepper to taste
5 to 8 thick slices of stick pepperoni peeled or more
extra virgin olive oil

In a large frying pan add 3 tablespoon of extra virgin olive oil heat on medium low heat. Place the unbeaten cracked eggs in the pan and stir them breaking the yolks. Add the pepperoni and peppers with oil and garlic into the pan. Saute until brown on both sides just flipping a few times. Place the provolone on top and fold till melts. Sprinkle with grated Romano cheese and parsley. Serve as is or in thick sliced hard crusted Italian bread.
