New York Salt Potato Recipe


A fairly easy recipe starting in the early 1800's somewhere around Syracuse New York,  these spuds were often made for lunch by the workers there. The potatoes are rich in buttery flavor and can be a perfect side when having a delicious seafood feast! One of my favorites and often made here in Florida with lobster or crab. 



Salt Potato Recipe

4 pounds small potatoes ( yukon gold)
1 stick butter melted for dipping
1 1/2 cups kosher or sea salt

Optional : dried parsley flakes

Place the potatoes in 8 quarts of water and  kosher or sea salt. Boil until fork tender around 30 minutes.

Serve dipping in melted butter. Sprinkle with parsley if using.

Slow Cooker Italian Pork Stew Recipe



I love slow cooked stews especially when the harvest of fresh vegetables hits the markets. I throw just about everything I can into my stew and after a long hard hot day in the summer this really does hit the spot. Oh course in winter months I end up using some frozen or canned sometimes but I just love sopping up my Italian bread in this amazing pot of stew!



Slow Cooker Italian Pork Stew Recipe

6 boneless thick pork chops cut into small pieces around 3 pounds
4 cubed potatoes
3 zucchini cut
3 plum tomatoes cubed
1 cup peas
1 cup sliced or finger carrots
1 stalk celery
1 pound fresh mushrooms
1 pound green beans cut
1 can crushed tomatoes
2 sliced bell peppers
1 teaspoon each Italian seasoning, granulated garlic, salt, pepper
cayenne pepper is optional to taste
1 28 ounce can crushed tomatoes adding 1/2 cup Cabernet wine to the can to rinse out the rest

Dump everything into your slow cooker stirring to evenly coat. Slow cook on high 6 to 8 hours or low for 8 to 10 hours. 

Escarole Pepperoni Side Dish Recipe



2 heads Escarole boiled and drained
3 cloves garlic cleaned 
2 teaspoons anchovy paste
salt, pepper, cayenne pepper
1 lemon seeded and juiced
1/4 cup extra virgin olive oil
stick pepperoni peeled and chopped into bite size pieces
1/4 cup Italian black crinkled and oil cured olives pitted
Grating cheese Romano
Optional: serve with roasted peppers

Heat the oil in a skillet on low. Add the garlic and paste. Cook 3 minutes. Remove the garlic.  Add the greens stir fry for 3 minutes. Season with pepper, salt, more garlic if you like (granulated). Place in a bowl with chopped pepperoni and chopped olives. Drizzle with lemon juice and toss. Add the cheese on top and serve warm. Optional serve with roasted peppers

Peanut Butter Cup Frozen Pudding Pie Video

This is is made with chocolate pudding, whipped topping and peanut butter cups! What's your favorite combination? Well lets get this summer dessert started! It's so easy!

Peanut Butter Cup Frozen Pudding Pie

1 1/2 cups half and half
1 package instant pudding either chocolate or vanilla
6 candy bars cut into small pieces ( peanut butter cups, kit kat, snickers, milky way, etc)
2 cups whipped topping
1 chocolate cookie crust store bought

In a medium sized bowl beat the half and half and pudding together until thickens. Stir in the whipped topping until well combined.


Add the candy into the filling or sprinkle on top which ever you prefer.  Pour into crust.
Freeze for around 4 to 6 hours. Let stand for 10 minutes before serving. This is great with hot fudge sauce over the top too!

Grilled Lemon Peppered Garlic Ribeye Steak Recipe


This marinade is great on any steaks and most of the time Ribeyes don't need marinating because since they're so marbleized it keeps them tender during cooking anyway. One of my favorite meats is this one. I love the marinade because it just enhances the perfect flavoring to these steaks!

 Lemon Peppered Ribeye Steak Recipe

4 ribeyes
3 tablespoons fresh squeezed lemon juice
2 cloves smashed garlic cloves
1 teaspoon Worcestershire sauce
1/2 teaspoon granulated garlic 
1/2 teaspoon Italian Seasoning
1/4 cup extra virgin olive oil
1/4 teaspoon black pepper
pinch of cayenne pepper
salt to taste

Place the steaks in a ziplock bag with all the ingredients. Marinade 4 to 6 hours in the refrigerator turning a few times. Remove steaks from the marinade.
Grill steaks on preheated hot grill to your desired doneness.


Tex Mex Tomato Salad Recipe





If you love tomatoes, cucumbers and summer vegetables this is a perfect salad to try. I love this one as it bursts with spring, summer and warmer weather! This one's for you read on. Make it a whole meal and add grilled cubed chicken or grilled shrimp!




Here's all you need:

Avocados peeled and diced
Fresh corn sliced off the cob
Grape, plum or cherry tomatoes sliced in half or cubed
Green, black or pimento stuffed olives
Fresh limes squeezed
Cucumbers peeled and sliced (I also take the seeds out)
Fresh cleaned raw broccoli and cauliflower stems removed and chopped
Celery is optional if you like it
Oregano dried flakes
Minced fresh garlic 
Salt, pepper and cayenne to taste
Extra Virgin Olive oil



Optional for meat lovers: cooked cubed chicken, steamed shrimp 
In a large bowl place all the vegetables, olives,  including minced garlic and meat if using and mix together.
Drizzle olive oil, two to three fresh squeezed lime juice over the top. Evenly shake oregano, salt, pepper and cayenne if you like a little heat.
This can be eaten as is or over a bed of greens which is super delicious.

Easy Caramel Apple Cake Recipe


This amazing caramelized topping makes itself while baking. The apples are infused with a buttery caramel slathering over a yellow cake to make a delicious dessert that everyone will swoon over. You will make it again and again! The cake is made with either a yellow or spice  cake mix!  My son loves apples so this is what we had for his birthday this year and he loved it! 
Happy Birthday Chad! 


As it bakes the caramel makes it all by itself!




  Easy Caramel Apple Cake

2 -  round 9 inch cake pans greased with cooking spray
1 stick butter cut in half
2 apples peeled  cored and sliced
1 cup brown sugar divided for 2 pans
cinnamon
flour
oil spray 
1 cake mix made to package instructions either yellow or spice mix

Place half stick of butter in each 9 inch pan which has been sprayed with cooking oil into each pan. Place both round cake pans with butter in oven at 350 degrees until butter melts. Take out, add into each pan 1/2 cup brown sugar, 1 sliced peeled and cored apple, 1 tablespoon cinnamon and 2 tablespoons flour. Stir the mixture to blend in each pan.
Mix cake mix to package instructions. Pour half the batter over the apple mixture into each pan. Pour half the batter over each pan.
Bake at 350 until center looks firm around 35 minutes.
Flip each cake onto wax paper lined plate and cool.

Serve with whipped cream of vanilla ice  cream.

Baked Rice Balls Meatless Recipe Video



Ever over cook rice? Well I did and I am very glad I did. See, I got a new rice cooker and hit cook twice instead of warm after it was cooked and got mush. No problem. Well I made these with a exceptional grade olive oil and baked them and it gave me the WOW factor! These came out great, crispy and I always want to over cook my rice on purpose now! Also what a great alternative when on a diet and not eating fried foods to not leave this delicious savory appetizer off my list of high calorie foods. 




Baked Rice Balls Meatless  Recipe

3 cups over cooked rice mushy
1 cup Tomato sauce
1 tablespoons freshly chopped parsley
1/2 cup Grating cheese
1 egg
breadcrumbs for rolling
salt, pepper, cayenne to taste
1 teaspoon garlic granulated
fresh garlic 1 clove
olive oil


Mix the rice, parsley, egg, sauce, cheese, garlics, salt, pepper and cayenne if using. Mold into meatballs and roll into italian seasoned bread crumbs. Place on baking sheet lined with foil sprayed with oil. Drizzle tops with a good grade olive oil. Bake in 400 degree preheated hot oven until browned and crispy on top around 35 minutes.

Roasted Parmesan Coated Vegetable Medley Recipe


I will let you in on a little secret. I have been making these roasted vegetables all kinds of ways as it was part of an experiment to see if I could lose weight, stay full and continue until I reached my goal weight. Well this method made me do the happy dance, it worked! Twenty pounds lost over the course of 2-1/2 months and I still eat healthy vegetables everyday for lunch and alternate different kinds to make it new and interesting.  I really love the energy and increased motivation it gave me. You just have to eat what you like. Vegetables are the way to the success of an easy weight loss with healthy alternatives.
Well I couldn't get all the ingredients in the title so as you can see peppers, tomatoes topping the eggplant are part of this wonderful roasted vegetable dish!

Here are a few suggestions to use after all vegetables are washed and prepared by removing stems and cut up:

Red sliced cabbage (I boiled it first to make sure it was cooked all the way through) 
brussels sprouts fresh or frozen cleaned
green and yellow squash
sliced eggplant
sliced tomatoes
sliced peppers
green beans fresh or frozen
mushrooms
broccoli 
okra
cubed butternut squash
baby carrots whole or sliced
cauliflower (orange or purple is perfect for summer or holiday)
Or use any other vegetables you love!
Cooking spray oil
granulated garlic
minced garlic
parmesan cheese grated
salt, pepper and cayenne to taste
cooking oil spray

Line an extra large cookie sheet with parchment paper.  Place all the vegetables on the cookie sheet (for the eggplant is using, place slices of tomatoes on eggplant then generously sprinkle cheese on top.)  Spray the entire tops with cooking oil.  Sprinkle evenly with spices then cheese on the all the vegetable. Roast in preheated oven of 400 degrees until the vegetables are cooked to your liking. We like ours soft so around 45 minutes.

Rosemary Basil Red Skin Potato Recipe


The seasoning on these red skin potatoes will be a great side dish for any potato lover. The herb brings out the flavor of the potato without overpowering the taste. I just love these with pork chops or even a hamburger. They crisp up nicely in the oven and have a beautiful aroma while cooking not to mention the best tasting potato with any meat you serve!


Rosemary Basil Red Skin Potato Recipe

4 red skin potatoes cut into wedges
4 sprigs of fresh rosemary
4 fresh basil leaves
olive oil
Italian flavored bread crumbs
salt and pepper to taste
1 tablespoon minced garlic
1 teaspoon dried oregano
pinch of cayenne pepper
grating cheese

In a large plastic bag add the potatoes with 4 tablespoons of olive oil and shake to coat. Add the salt, pepper, garlic, pinch of cayenne pepper and oregano. Spread onto a cookie sheet lined with parchment paper. Sprinkle generously with bread crumbs.  Bake at 425 degree hot oven until browned and crispy. Remove from oven and toss with fresh basil, rosemary and sprinkle with grating cheese. Add more salt and pepper if needed.

Parmesan Garlic Roasted Tomato Recipe


Roasted tomatoes with a light brushing of EVOO and dusted with a blend of grated cheeses have an amazing flavor. One of my favorites and the perfect light lunch in warmer weather! Not many ingredients and anyone can do these. Great done on the grill too! Add to a salad of use even as a side dish with a piece of grilled chicken or fish just pure deliciousness!


Parmesan Garlic Roasted Tomato Recipe

plum tomatoes sliced length wise as many as you want
Italian style bread crumbs with parmesan cheese added to them
Minced garlic 1/2 clove per tomato
Chopped fresh parsley
More grating cheese a blend of Asiago, Romano and Parmesan
Extra Virgin olive oil
salt, pepper, cayenne to taste

Optional: Romaine lettuce for garnish

On a parchment lined cookie sheet place the cut up plum tomatoes. Brush each one with olive oil. Sprinkle generously with grating cheese then top with bread crumbs a little on each. Add the chopped garlic, parsley, salt, pepper to taste and drizzle just a little bit more oil on each one.  Roast in a hot oven at 400 degrees until soft but not mushy around 20 minutes.  

For Grilling:

I place the cut up tomatoes and same recipe above on an oil sprayed piece of foil and then place foil directly on the hot heated grill for around 15 to 20 minutes leaving it vented open just little bit.

Meatloaf Italian Style Recipe



Really a favorite here. Italian style meatloaf. Full of flavor you will make it often!




Meatloaf Italian Style 


Italian Parmesan Style Meatloaf

1 1/2 pounds ground beef or ground turkey
2 eggs, beaten
3/4 cup dry Italian style flavored bread crumbs
1/4 cup tomato sauce (preferred) or ketchup if you like it
1/4 grating cheese
1/4 teaspoon of cayenne pepper
1/2 teaspoon worcestershire sauce
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon fennel seed (optional)
2 cloves of minced garlic
1/2 teaspoon garlic powder
1 diced tomato
1 1/2 cups shredded mozzarella cheese
2 bell peppers sliced
Preheat oven to 350 degrees
In a large bowl, mix together ground beef or turkey, eggs, bread crumbs, grating cheese and sauce. Add oregano, basil, garlic powder, half the diced peppers and 1 diced tomato. Press into a large loaf pan or form individual ones in the shape of footballs, top with more add more grating cheese bake till crispy looking then 15 minutes before cooked add more fresh chopped garlic, mozzarella,
( optional: peppers and tomato,) cover loosely with foil till cheese is melted and serve.

Bake in the preheated oven approximately 1/2 hour remove foil until browned and crisp on top.

Baked Cod in Parchment Cajun Lime Spiced Recipe




A delicious blend of herbs and spices with lime accents the flavor of this wonderful fish..






 Lemon or Lime sliced and seeds removed
2 lbs cod pieces or haddock
butter slices
olive oil
cajun spice
minced garlic
1 sliced bell pepper
parchment paper
salt, pepper
smoked paprika
fresh rosemary sprigs 

 Optional garnish: dash hot sauce
minced fresh parsley

On a piece of parchment paper large enough to fold to cover the fish, lay a piece of fish on the paper, brush with olive oil. Sprinkle with herbs, spices, salt, pepper, garlic, paprika. Dot the top with sliced butter. Add the sliced peppers, lime slices. Fold the paper to cover the fish and tie with string. Bake on 400 degree hot oven 25 to 35 minutes. Serve with chopped parsley and hot sauce if desired.
