A delicious blend of herbs and spices with lime accents the flavor of this wonderful fish..
Lemon or Lime sliced and seeds removed
2 lbs cod pieces or haddock
1 sliced bell pepper
fresh rosemary sprigs
Optional garnish: dash hot sauce
minced fresh parsley
On a piece of parchment paper large enough to fold to cover the fish, lay a piece of fish on the paper, brush with olive oil. Sprinkle with herbs, spices, salt, pepper, garlic, paprika. Dot the top with sliced butter. Add the sliced peppers, lime slices. Fold the paper to cover the fish and tie with string. Bake on 400 degree hot oven 25 to 35 minutes. Serve with chopped parsley and hot sauce if desired.
