Italian Roasted Plum Tomatoes are the juiciest most flavorful tasting tomatoes loaded with Parmesan cheese and crunchy breadcrumb topping you'll ever sink your teeth into.

Easy to make, fool-proof, and amazing as an appetizer or light brunch as a topping for greens!

These can be served so many ways and we have all the suggestions that await you below, plus these make a great side dish for any meal.

We also have 3 cooking methods for you to try, grilled, air fried in less than 8 minutes, or the conventional oven baked.

As a child, my grandmother made these all summer long because my dad(her son) had a huge garden full of plum tomatoes this was just one way we would enjoy them all summer long.

Grandma's recipe was adapted from her home in Rome, Italy, and she taught me how to make her recipe when I was around 11 years of age.

Step By Step Italian Roasted Plum Tomatoes (Oven Method, Air Fried, or Grilled)

  1. Slice Tomatoes: Buy firmer plum tomatoes and slice them lengthwise place them on oil-sprayed parchment paper or foil
  2. sprinkle with topping ingredients listed below on the lined disposable pan
  3. For oven: heat to 425 degrees for 20 25 minutes depending on the thickness that you cut the tomatoes
  4. For air fry: place them on an in oil sprayed foil pan with topping and air fry for 8 minutes depending on thickness
  5. For Grilling: I place the cut-up tomatoes and the same recipe above on an oil-sprayed piece of foil and then place the foil directly on the hot heated grill for around 15 to 20 minutes leaving it vented open just a little bit.
  6. Note: oil spray the breadcrumbs or drizzle with melted butter before the cooking methods you choose
  7. Garnish: with more cheese and fresh basil

Ingredients You Will Need:

  • Sliced Rosa Plum Tomatoes
  • Freshly minced garlic around 3 cloves
  • Freshly chopped parsley
  • Italian flavored breadcrumbs
  • Grated Paremesan cheese or Parmesan Reggiano
  • Extra virgin olive oil, butter, or olive oil cooking spray (enough to drizzle over the top)
  • salt, pepper, and cayenne pepper to taste
  • Fresh basil
  • Optional: Shredded mozzarella, Dried oregano

Italian Roasted Plum Tomatoes

Italian Roasted Plum Tomatoes

These are an Italian delight using Rosa Plum tomatoes sprinkle with herbs and garlic topped with bread crumbs and roasted in the oven.
Prep time: 10 MinCook time: 15 MinTotal time: 25 Min

Ingredients

  • 4 to 6 firm Sliced Rosa Plum Tomatoes
  • a handful of Freshly minced garlic around 3 cloves
  • a handful of Freshly chopped parsley
  • 1/2 cup Italian flavored breadcrumbs or more if needed
  • 1/2 cup Grated Parmesan or Parmesano Reggiano cheese
  • Extra virgin olive oil, melted butter, or use oil spray (enough to drizzle over the top)
  • salt, pepper, and cayenne pepper to taste
  • a handful of Freshly chopped basil
  • 1 teaspoon or more Dried oregano
  • Optional: Shredded mozzarella
  • Serve on a bed of Romaine lettuce for garnish with a drizzle of balsamic vinegar and more extra virgin olive oil.

Instructions

  1. In a small bowl mix around 1/2 cup (or more if needed) of bread crumbs of choice with 1 tablespoon of grated cheese and 2 tablespoons of extra virgin olive oil (or melted butter and you can just oil spray for fewer calories on the top of each tomato slice) and set aside.
  2. Wash and dry the Plum tomatoes then thickly slice lengthwise (as many as you want) per family.
  3. Place these on a parchment-lined baking sheet or a disposable foil pan oil sprayed with cooking oil (for cooking on the grill or air fryer method use a disposable aluminum pan).
  4. Sprinkle the tops of each tomato with Italian-style bread crumbs with Parmesan cheese added to them.
  5. Sprinkle evenly with a little of each below:
  6. Minced garlic
  7. Chopped fresh parsley
  8. Grated cheese
  9. Drizzle with Extra Virgin olive oil, melted butter or cooking spray oil
  10. salt, pepper, and cayenne to taste
  11. On a parchment-lined cookie sheet place, the cut-up plum tomatoes.
  12. Drizzle with more olive oil over the top of each one just a little!
  13. Roast in a hot oven at 425 degrees until soft but not mushy around 25 minutes. Around 5 minutes before they are done sprinkle the tops with mozzarella if desired.
