Spaghetti Pie

This is a totally delicious Spaghetti Pie casserole that the kids and adults just loved who cares what shape you make it in.


Personally a pie plate isn't deep enough to get the full experience of Spaghetti Pie so I use a casserole dish and savor the deep dish flavors of this great all in one meal!


It's an American version sometimes referred to as poor man's lasagna.


All in all, it's one of the tastiest and tallest casseroles I have ever made and usually done in a springform pan, but since I didn't have one, my casserole vessel did the trick.


I love the fact that it's packed with delicious cheeses and amazing Italian sauce.


Just be sure to make two because this spin on the classic spaghetti taste more like lasagna and a fun spin on spaghetti plus it can be any shape and cut like a pie!


Homemade Marinara or store-bought sauce will be a compliment in flavor to this casserole on your tables.

Zucchini Spaghetti Recipe

A light olive oil white sauce with delicious grated cheese makes this the perfect alternative for pasta lovers. If you are watching your calorie intake this one is 60 calories for 2 small grated zucchini and the taste is just perfect! This is an easy meal or side dish to make when you are in a hurry. 


Zucchini Spaghetti Recipe

2 zucchini peeled and shredded in long strands (I used a long hand held grater to make it. I actually tried the plastic one that is used to make zucchini spaghetti and it was more work!)
2 cloves minced fresh garlic
salt, pepper to taste
cayenne pepper just a dash
2 to 3 tablespoon wide shredded Parmesan grated cheese 
1/2 teaspoon granulated garlic
1 chopped fresh basil leaf
4 tablespoons extra virgin olive oil divided
optional: 2 tablespoon white wine

Place the zucchini shreds in a microwave bowl with water to cover or use a small saucepan for top of stove. Bring to boil.  Cook around 10 to 12 minutes adding a pinch of salt to the water. Check for softness.  Drain.
Saute garlic in oil for 2 minutes in 2 tablespoons olive oil. Add all the spices, herbs (and wine if using) then the zucchini until blended. Mix in the cheese as much as you like. Add one or two more tablespoon of olive oil, stir.  Serve immediately.

Option: You can add fresh tomato sauce on top of the zucchini then top with more cheese,  this was a white sauce version.

Another option is to add boiled cooked shrimps on top.

Make Your Own Brown Sugar Recipe

How many times you want to make that recipe and out of brown sugar? Well here is the simple solution. You just need two ingredients. Mix in a bowl, store in an airtight container!


To keep it soft add an apple slice or piece of bread to the container, it's amazing that neither gets moldy! If you prefer to use a terra cotta clay disk, its around $7.00 at a baking shop. That will do the trick on preserving the brown sugar from getting hard as a rock just add it to the container.


Make Your Own Brown Sugar Recipe

Light Brown
2 tablespoons molasses
1 cup white sugar

Dark Brown
3 tablespoons molasses
1 cup white sugar

Butterscotch Pudding Cake

The best of both worlds is this butterscotch cake when baked all in one pan, makes its own magic butterscotch pudding sauce!

This cake has a butterscotch cake layer and as it bakes and when you scoop out the cake it has a butterscotch warm saucy pudding  that oozes out from the bottom.

It's just an amazing all-in-one cake dessert that any butterscotch lover will flip over.

With easy pantry ingredients, you can make this quickly any weeknight, just be prepared for it to be the most memorable dessert you've ever made, it's a conversation piece for sure on "how does it do that!"

Not to be compared to the magic cake recipes that make a built-in custard, this is much more like a thin pudding sauce, it's just amazing how it bakes like that and so easy.

As a child, mom made this for dad he was the butterscotch lover but we all became fans quickly, this is an old vintage recipe that through the generations, it remains a favorite.

Self Rising Flour Recipe

Self Rising flour homemade is super easy and can be used in place of any recipe that calls for flour, salt, and baking powder it's all premade for your recipe using this premixed version.

To substitute self-rising for all-purpose flour, most of the recipes that call for this are biscuits, pancakes and cornbreads (quick style breads).

Self-rising flour is a type of flour that includes leavening agents, that enhance your baked goods so no additional leavening agents needs to be added.

Do not use self-rising flour if yourmaking yeast-raised bread.

Self-rising flour does not contain baking soda so if you are using self-rising flour and the recipe calls for baking soda be sure to add it

As a general rule, you probably do not want to use self-rising flour if there is only baking soda in the recipe and not baking powder, however the flour in pancakes with the addition of baking soda comes out perfectly see recipe below.

Now making it at home all homemade, it's so economical, we can make our favorite pastries all year long.

A candy thermometer is a must-have to make it right.


Remember to use whole blanched almonds as the skins will make it bitter.

Homemade Lemon Extract Recipe

This is a recipe on how to make homemade lemon extract to use in cakes, cookies or whenever a recipe calls for lemon extract

Ingredients

  • 1 cup vodka
  • 6 whole lemons peeled and washed and peel with no white part of the rind

Instructions

  1. Slice up the rind in string form and add to the vodka place into a medium size saucepan.
  2. Heat to boiling then cool and add to a glass jar.
  3. Store for 4 weeks in a dark cupboard area.
  4. Shake occasionally.
  5. Use without rind in it by straining it into a clean glass-covered jar.
  6. Store it in the refrigerator or dark cabinet area.
  7. Use as needed in cakes, cookies, and other recipes calling for lemon extract.

Homemade Baking Powder Recipe

Did you know the kind of baking powder you buy in the store has aluminum in it and if you have a sensitivity to it then it is something you should be eliminating right ? Well this is not hard to put together. I leave mine in a glass jar and keep it on hand by making only 1/2 cup at a time. Happy baking!






Homemade Baking Powder Recipe
2 tablespoons cornstarch
2 tablespoons baking soda
4 tablespoons cream of tarter
Mix together and store in an airtight jar or in airtight plastic container.

Don't forget to do the test on it when you keep it a long period of time or better yet date it!
TEST TIP:  If you need to check and see if your powder is still actively working at maximum capacity do this: add a half teaspoon to 1/2 cup hot water and if it bubbles it's still active.

Just Add Water Baked Pancake Mix Recipe

I don't like standing over a hot stove especially in summer. These can be the perfect solution for your camping needs as well. The mix is easy to put together, lasts around a year I keep mine in the refrigerator but you can store in the pantry. I make four good size pie tins baked out of this mix or for each batch mixed around 8 pancakes. Then by adding fruit to the top with some cinnamon, sugar and butter you have the perfect baked pancake in the oven or grill! Of course cooked meats can be added to for the complete breakfast.
Note: for those of you wanting to really cut time just buy the complete mixes at the supermarket. Follow package instructions making the batter a little thinner with adding 3 tablespoons more water than recipe calls for. Proceed to bake and use topping suggestions with instructions below.



Just Add Water Baked Pancake Mix Recipe

2 cups all purpose flour
2 cups cake flour
1 cup powdered milk
3/4 cup instant malted milk powder
1/2 cup sugar
2 tablespoons baking powder
1 teaspoon baking soda
3 teaspoons salt
1/2 cup butter powder
1/4 cup plus 3 tablespoons egg powder
3/4 cup buttermilk powder

Garnish suggestions:

Sliced fresh apples, blueberries, sliced peaches or pitted sliced cherries
cinnamon
sugar
butter
Mix all dry ingredients into a large container or use a freezer ziplock bag and shake all together.

Topping:
maple syrup
Cooked pork sausages, bacon or ham slices

Disposable pie tins
Cooking spray

When ready to make your pancake add 2 1/4 cups dry mix with around 3/4 cup water or more I like it thinner batter. Depending on the altitudes you may need a little more water. 

Pour into greased pie tins. Top with fruit if using then sprinkle with cinnamon sugar, dot with butter.

Bake in preheated oven at 375 degrees until browned on top around 20 minutes.

If using the outdoor grill,  place tin and batter on low heat with the grill cover down for 10 to 15 minutes.

Healthier Baked Barbecued Chicken Leg Recipe

Economically using chicken legs and thighs will make the best broth, so we boil them first.

These have either skin or no skin that is up to you we take ours off.

Season the chicken however you like it, we use garlic powder, salt and pepper and keep it plain and simple.

This also works great for grilling, boiling the chicken first to ensure it completed cooking on the grill and the broth makes great soup.

Stretching the budget to go further is a neccessity with a larger family and this is something we grew up doing.

The chicken can even be put in freezer bags and reheated if you feel it's way to much, or just cut your recipe in half, we tend to purchase larger quanities and it's less expensive in bulk.

Patriotic Flag Cheese Pie

Every year to show appreciation to the men who helped keep our freedom and served our country, I make festive food like this Patriotic Flag Cheese Pie.

It is truly a delicious pie that symbolizes and honors those brave men for holidays like the 4th of July, Memorial Day, or Veterans Day, this pie just shouts pure love as we share memories with friends and family at social gatherings.

I start out by using colorful fruits, bake strips of stars and stripes from refrigerated pie crust or homemade, and using simple instant boxed cheesecake mix and you're on your way to a festive pie.

I love celebrating with a Patriotic table with red, white, and blue themes and creating art from food.

Everything was just perfectly decorated.

I served this surrounding the same colors in a flag tablecloth, all festive paper products, and this dessert truly made a memorable get-together, especially to our family members we remember on these days.

This cheesecake stood proud and not for long, they all devoured it in minutes!
