Italian Rice with Beans and Sauce Recipe



For those days you just want to make a great side dish with that leftover sauce this is a delicious rice combination of flavors that goes with any kind of meat or just plain with a nice chunk of crusty Italian bread. I had some leftover Traditional Italian Sunday Sauce and here is what I made with this for our last barbecue.


To make this even hardier and a whole meal add some sliced sauteed sausage or crushed leftover meatballs.


Traditional Sunday Sauce or store bought Italian sauce (around 3 cups)
Cooked white rice around 2 cups or more depending on family size
2 thinly sliced bell peppers
2 cups cooked beans white or red
Parmesan cheese
Optional: sliced cooked sausage or crushed meatballs

In a medium size deep fry pan add 3 tablespoons olive oil and saute the peppers for around 4 minutes. Add the sauce. Stir in the rice and beans until heated through add meat if using. Sprinkle generously with Parmesan cheese.
