Homemade Mommy Fish Nugget Recipe

A simple crunchy recipe that can be baked or fried. A combination of bread crumbs and pancake mix make this coating special. Give it a try you won't be sorry! I used scallops but you can use any cut of seafood you love!



Fish Nuggets:

1 cup Italian Style Bread Crumbs mixed with 1 cup of buttermilk pancake mix place in a zip lock bag.

Add  1/4 cup Romano cheese or Parmesan, 1 teaspoon garlic powder, pinch of salt, pepper and a pinch of cayenne pepper.
 Add all this to the zip lock plastic bag

In a bowl add:

2 eggs beaten in the bowl adding
2 tablespoons hot sauce
1 pound haddock, cod or other white fish cut up in small pieces (you can also use scallops, shrimp or lobster pieces)
Canola or other oil

Heat 1/2 inch deep oil in a fry pan.  Place the cut up fish of choice in egg.  Shake bite size pieces of fish in the dry mixture in the zip lock bag.  Deep fry the fish until golden brown around 6 to 7 minutes. Turning once.

You can also bake these on a cookie sheet on 400 degrees and a drizzle of olive oil over the top. Bake till golden brown around 25 minutes.
