Italian Crab Fritter Appetizer Recipe

Probably one of my favorite appetizers ever! These are so easy and just a little more elegant than the normal fritter. If you love seafood then start off the New Year with a great little orderve that everyone will rave about! It's a definite keeper and special occasion type of treat!

Italian Style Crab Fritters

1 egg
3 tablespoon mayonnaise
1/2 cup seasoned flour ( 1 teaspoon granulated garlic, salt, pepper and cayenne pepper to taste)
1 can fancy white crab meat 8 ounces
oil for frying

In a medium size bowl add the mayo, seasoned flour and egg beating together. Fold in drained crab meat. Drop into hot oil in a heated fry pan. Fry on both side. Drain on paper towels.
Serve with hot sauce or great with scampi sauce using the crab cakes instead of shrimp drizzled of the tops or alfredo sauce.

How many eggs? 1 or 2. The recipe calls for two, but the instructions only mention 1.

I have some mighty fine frozen lump crabmeat in the freezer. And now I have a delicious use for it! It sounds wonderful!
