Here is the perfect copycat recipe in a cinnamon roll made in cupcake tins for those on the go and who are big fans of the famous Cinnabon Rolls that use to be sold in malls.

One of the best smells to me is cinnamon in the house. These muffin rolls make your mouth water before they even come out of the oven.

During the holiday, I always make them all dressed up with a cherry on top and tinted green sliced almonds or pistachios. They look so pretty on the table at Christmastime.

My kids love cinnamon rolls. These rolls reminded them of a famous roll in the mall we would get.

Every time I make them they are so excited to dig in.

They are delicious any time of the day and being made in a cupcake tin makes them portable to take along to work or on the go!

Escarole Soup with Vegetables

This hearty soup is packed with all kinds of vegetables and to save time mostly frozen or precooked to get that dinner on the table in no time.

Of course, you can use all fresh not canned when in the season but this is great alternative for the hurried cooks out there.

Low calorie, healthy, and lots of nutrition with using escarole for vitamin A.

You could substitute swiss chard, spinach, or kale for the escarole if you can't find it.

There are plenty of substitutions below for changing your vegetarian recipe with any vegetables you prefer.

Again if you have the time, everything that goes in the pot would have to simmer a lot longer.

You could also put everything in a slow cooker for 6 to 8 hours on high if you would like all fresh vegetables, just make sure you get all that flavor in there!

What better way to kick off fall than with an old-fashioned taste using apples, cinnamon, and oats baked into a fabulous crisp that makes everyone's mouth water from the aroma?

This brings back such fantastic childhood memories since this vintage 1924 recipe has been around for so long just about everyone's mom in the 1960s made this when I was growing up.

Our recipe is easier and has such a classic basic flavor, and you can actually tweak it by adding more or fewer spices.

Of course, if you're not a fan of apples, we've also tried blueberry, bing cherries, raspberries, and even some mango as an addition you can check below for some other suggestions.

We use simple pantry ingredients that will have this delicious crisp on your tables in around 55 minutes.

The best Blackberry Pie ever.

No kidding I have such fond memories of this pie as a child and always made it during the season in memory of my mom.

Delicious old fashioned pie crust, loads of blackberries, spiced with a little lemon, cinnamon thickened with cornstarch, and a good old-fashioned recipe.

German Chocolate Cake Mix Recipe

The name German chocolate cake is a little deceiving as it is not actually a German dessert and traditionally the cake is a lighter-colored cake with a mild chocolate taste and the entire cake is usually covered in coconut pecan frosting.


Coconut has always been a favorite of mine with a combination of chocolate and pecans, it's totally scrumptious.


The only difference here will be this isn't made from scratch, I used a mix, and being a full-time manager I am away from home so much I wanted my favorite cake fast and easy.


You may also like to try our German Chocolate Coconut Bars (really a brownie topped with this yummy gooey frosting!) also totally divine!


I couldn't scrimp or cut corners on my favorite part, the decadent German coconut pecan frosting, but it takes just a few minutes to make and so worth it!

Harvey Wallbanger Cake

This is an old 1970s recipe using a cake mix, orange liqueur, vodka, and orange juice (you may remember the unique name) called Harvey Wallbanger Cake.

I love doctored cake mix recipes and when in a hurry to bring a cake to a dinner party, potluck, or just because the cake is outstanding in flavors, this "Adult cake" is my first pick and always a big hit.

The recipe is super easy to make all in an old-fashioned bundt pan, then drizzling with a thin icing or just powdered sugar on top is fine also.

Our doctored yellow cake mix bakes perfectly in just about any kind of pan so no worries if you don't have a bundt pan, but that is the original old-school style.

Add a few orange slices on top and orange zest and you'll have a pretty cake to bring to your next event or party you're hosting.

We love making easy cakes with a cake mix and fooling everyone it's not from scratch.

I have made delicious Sour Cream Coffee Cupcakes using a cake mix, cookies, and even a Scrumptious Banana Cake Mix Cake that all taste like they were from scratch!

Mom's Dutch Apple Pie Recipe

One of the pies I really loved warm or cold is Dutch Apple Pie.

I just love the soft but slightly crunchy topping on the apples it reminds me of cobblers more than pie.

Either way with a scoop of ice cream you got one heck of a pie alamode.

Mom uses to make this with a graham cracker crust and by brushing egg yolk on the bottom so it wouldn't get soggy from the apples but through the years I adapted this one as I prefer regular homemade pie crust.

You can do either one.

During the holiday I always buy lots of heavy cream for pies and baking.

Spaghetti Pie

This is a totally delicious Spaghetti Pie casserole that the kids and adults just loved who cares what shape you make it in.


Personally a pie plate isn't deep enough to get the full experience of Spaghetti Pie so I use a casserole dish and savor the deep dish flavors of this great all in one meal!


It's an American version sometimes referred to as poor man's lasagna.


All in all, it's one of the tastiest and tallest casseroles I have ever made and usually done in a springform pan, but since I didn't have one, my casserole vessel did the trick.


I love the fact that it's packed with delicious cheeses and amazing Italian sauce.


Just be sure to make two because this spin on the classic spaghetti taste more like lasagna and a fun spin on spaghetti plus it can be any shape and cut like a pie!


Homemade Marinara or store-bought sauce will be a compliment in flavor to this casserole on your tables.

Zucchini Spaghetti Recipe

A light olive oil white sauce with delicious grated cheese makes this the perfect alternative for pasta lovers. If you are watching your calorie intake this one is 60 calories for 2 small grated zucchini and the taste is just perfect! This is an easy meal or side dish to make when you are in a hurry. 


Zucchini Spaghetti Recipe

2 zucchini peeled and shredded in long strands (I used a long hand held grater to make it. I actually tried the plastic one that is used to make zucchini spaghetti and it was more work!)
2 cloves minced fresh garlic
salt, pepper to taste
cayenne pepper just a dash
2 to 3 tablespoon wide shredded Parmesan grated cheese 
1/2 teaspoon granulated garlic
1 chopped fresh basil leaf
4 tablespoons extra virgin olive oil divided
optional: 2 tablespoon white wine

Place the zucchini shreds in a microwave bowl with water to cover or use a small saucepan for top of stove. Bring to boil.  Cook around 10 to 12 minutes adding a pinch of salt to the water. Check for softness.  Drain.
Saute garlic in oil for 2 minutes in 2 tablespoons olive oil. Add all the spices, herbs (and wine if using) then the zucchini until blended. Mix in the cheese as much as you like. Add one or two more tablespoon of olive oil, stir.  Serve immediately.

Option: You can add fresh tomato sauce on top of the zucchini then top with more cheese,  this was a white sauce version.

Another option is to add boiled cooked shrimps on top.

Make Your Own Brown Sugar Recipe

How many times you want to make that recipe and out of brown sugar? Well here is the simple solution. You just need two ingredients. Mix in a bowl, store in an airtight container!


To keep it soft add an apple slice or piece of bread to the container, it's amazing that neither gets moldy! If you prefer to use a terra cotta clay disk, its around $7.00 at a baking shop. That will do the trick on preserving the brown sugar from getting hard as a rock just add it to the container.

Self Rising flour homemade is super easy and can be used in place of any recipe that calls for flour, salt, and baking powder it's all premade for your recipe using this premixed version.

To substitute self-rising for all-purpose flour, most of the recipes that call for this are biscuits, pancakes and cornbreads (quick style breads).

Self-rising flour is a type of flour that includes leavening agents, that enhance your baked goods so no additional leavening agents needs to be added.

Do not use self-rising flour if yourmaking yeast-raised bread.

Self-rising flour does not contain baking soda so if you are using self-rising flour and the recipe calls for baking soda be sure to add it

Homemade Lemon Extract Recipe

This is a recipe on how to make homemade lemon extract to use in cakes, cookies or whenever a recipe calls for lemon extract

Ingredients

  • 1 cup vodka
  • 6 whole lemons peeled and washed and peel with no white part of the rind

Instructions

  1. Slice up the rind in string form and add to the vodka place into a medium size saucepan.
  2. Heat to boiling then cool and add to a glass jar.
  3. Store for 4 weeks in a dark cupboard area.
  4. Shake occasionally.
  5. Use without rind in it by straining it into a clean glass-covered jar.
  6. Store it in the refrigerator or dark cabinet area.
  7. Use as needed in cakes, cookies, and other recipes calling for lemon extract.

Homemade Baking Powder Recipe

Did you know the kind of baking powder you buy in the store has aluminum in it and if you have a sensitivity to it then it is something you should be eliminating right ? Well this is not hard to put together. I leave mine in a glass jar and keep it on hand by making only 1/2 cup at a time. Happy baking!






Homemade Baking Powder Recipe
2 tablespoons cornstarch
2 tablespoons baking soda
4 tablespoons cream of tarter
Mix together and store in an airtight jar or in airtight plastic container.

Don't forget to do the test on it when you keep it a long period of time or better yet date it!
TEST TIP:  If you need to check and see if your powder is still actively working at maximum capacity do this: add a half teaspoon to 1/2 cup hot water and if it bubbles it's still active.

Just Add Water Baked Pancake Mix Recipe

I don't like standing over a hot stove especially in summer. These can be the perfect solution for your camping needs as well. The mix is easy to put together, lasts around a year I keep mine in the refrigerator but you can store in the pantry. I make four good size pie tins baked out of this mix or for each batch mixed around 8 pancakes. Then by adding fruit to the top with some cinnamon, sugar and butter you have the perfect baked pancake in the oven or grill! Of course cooked meats can be added to for the complete breakfast.
Note: for those of you wanting to really cut time just buy the complete mixes at the supermarket. Follow package instructions making the batter a little thinner with adding 3 tablespoons more water than recipe calls for. Proceed to bake and use topping suggestions with instructions below.



Just Add Water Baked Pancake Mix Recipe

2 cups all purpose flour
2 cups cake flour
1 cup powdered milk
3/4 cup instant malted milk powder
1/2 cup sugar
2 tablespoons baking powder
1 teaspoon baking soda
3 teaspoons salt
1/2 cup butter powder
1/4 cup plus 3 tablespoons egg powder
3/4 cup buttermilk powder

Garnish suggestions:

Sliced fresh apples, blueberries, sliced peaches or pitted sliced cherries
cinnamon
sugar
butter
Mix all dry ingredients into a large container or use a freezer ziplock bag and shake all together.

Topping:
maple syrup
Cooked pork sausages, bacon or ham slices

Disposable pie tins
Cooking spray

When ready to make your pancake add 2 1/4 cups dry mix with around 3/4 cup water or more I like it thinner batter. Depending on the altitudes you may need a little more water. 

Pour into greased pie tins. Top with fruit if using then sprinkle with cinnamon sugar, dot with butter.

Bake in preheated oven at 375 degrees until browned on top around 20 minutes.

If using the outdoor grill,  place tin and batter on low heat with the grill cover down for 10 to 15 minutes.
