This easy all-in-one pan casserole has so many names, No Peek Chicken is just one of many.

You may have heard this dish called all-in-one pan creamy chicken and rice casserole, no peek chicken casserole, chicken and rice casserole, chicken soup casserole or onion soup baked chicken casserole.

It's one of that easy-peasy throw-in-one-pan, cover-and-bake recipes, that's so easy it really doesn't need to be a recipe at all because the ingredients make all the magic for this meal in your oven.

Ingredients You Will Need to Make No Peek Chicken Casserole

  1. long-grain white rice
  2.  homemade cream of chicken soup or 1 can of store-bought 
  3. homemade cream of mushroom soup or 1 can of store-bought 
  4. water, chicken broth, or milk for more creaminess 
  5. dried thyme or poultry seasoning 
  6. boneless skinless chicken breasts 
  7. salt and pepper to taste 
  8. Optional 1 8-ounce package of sliced white mushrooms onion soup packet

Tips You Must Know for Perfect No-Peek Chicken Casserole


Don't be tempted to peek at the casserole while baking hence the name no peek!

Once you put the foil over the casserole the oven does the magic however you will need to check right around 1 hour and 15 minutes to make sure that the rice is nice and soft.

Even though the steam will cook the rice and chicken to perfection and keep the chicken tender, it still can be not cooked to your preference, just remember chicken is cooked at 165 degrees so use an instant-read thermometer and remove it if the rice isn't cooked yet.

You can always add more water, chicken broth, or milk and continue to cook the rice until it's cooked.

SLOW COOKER MEthod: When using a slow cooker mix all ingredients together, layer half of the mixture, chicken, and then pour the remaining mixture on top.

Add 1 to 1 1/2 cans of water and slow-cook the chicken and rice for 4 hours on high. Remember the internal temperature for chicken using an instant-read thermometer is 165 degrees.

All-in-one pan creamy chicken and rice casserole baked using soups and simple ingredients

Ingredients

  • 2 cups of long-grain white rice
  • 1 recipe for homemade cream of chicken soup or 1 can of store-bought
  • 1 recipe for cream of mushroom soup or 1 can of store-bought
  • 1 cup water, chicken broth, or milk for more creaminess
  • 1 teaspoon dried thyme or poultry seasoning
  • 4 large boneless skinless chicken breasts
  • salt and pepper to taste
  • Optional 1 8-ounce package of sliced white mushrooms
  • 1 package of onion soup packet (ranch dressing or Italian dressing mix can be used also)
  • cooking spray oil or use butter

Instructions

  1. Preheat the oven to 350 degrees and grease a baking deep pan around 13 x 9 with cooking spray oil.
  2. Blend together into a large mixing bowl the rice, both soups, chicken broth, and herbs then mix them together (add mushrooms if using).
  3. Dump this mixture into the prepared baking pan.
  4. Place the chicken on top.
  5. Sprinkle with one of the suggestive dressing or soup mixes.
  6. Cover with foil.
  7. Bake for 1 hour and 15 minutes or until the internal temperature in the thickest part of the chicken reaches 165 degrees.
