This is a super easy baked salmon or any seafood you like with a Greek-style salad topping. 


The fish has a wonderful Homemade Greek Dressing made with fresh lemon, oregano dressing that's blended in this salad topping.


Any fish you choose will be perfect with this lighter topping and dressing, it's the perfect summer seafood dish.


I also will provide several cooking methods that you can use all year long.


We have made this recipe with cod, haddock, Mahi Mahi, and today we used salmon.


This basic recipe is perfect for all kinds of fish and a perfect addition to your seafood recipe collection.

Step by Step

  1. choose a cooking method below
  2. chop the vegetables for the salad topping
  3. make the Homemade Greek Dressing or use your favorite store-bought
  4. top the cooked fish with the salad and serve

Ingredients You Will Need (see suggestions below for more flavor combinations)



  • salmon, (or use haddock, sea bass, or halibut, cod, mahi-mahi, or other fish you prefer)
  • fresh dill
  • olive oil
  • fresh lemon juice
  • sliced garlic
  • fresh parsley
  • salt and pepper to taste
  • Topping
  • Homemade Greek Dressing
  • sliced Kalamata olives
  • crumbled feta cheese
  • cherry or grape tomatoes cut in half
  • pepperoncini
  • Optional: cayenne pepper for heat

Other Topping Additions

  1. diced red onion
  2. diced bell peppers
  3. chopped and seeded cucumbers
  4. chopped fresh garlic
  5. mango, chopped 
  6. green bell peppers, 
  7. pineapple
  8.  papaya
  9. avocado

Alternate Cooking Methods

  • Stovetop: pan saute the fish in the olive oil mixture, lemon juice, herbs, dill, salt, pepper on both sides for 11 minutes, add the garlic 2 minutes before completed cooking
  • Air Fryer: preheat to 400 degrees, oil spray foil for basket style (use seafood of choice), or use a pie plate that's oven-proof for oven style air fryer,  add olive oil mixture, and air fry around  7 minutes or until salmon flakes easily
  • Oven: preheat oven to bake at 400 degrees using the same herbs, seasonings bake for 12 minutes 
  • Grilled:  oil spray the grates then heat the grill to medium. Add the fish of choice with seasonings and baste with the lemon juice after this is seared on both sides. Grill the fish until it flakes easily around 7 minutes flipping once.

This is a wonderful fresh salmon topped Greek salad. using a homemade Greek dressing recipe. A versatile recipe that tastes great with any seafood.

Ingredients

  • 4 - Salmon filets ( around 2 pounds)
  • (or use haddock, sea bass, or halibut, cod, mahi-mahi, or other fish you prefer)
  • 4 tablespoons olive oil or cooking spray
  • 1/4 cup fresh lemon juice
  • 1/2 teaspoon oregano
  • 2 cloves of minced garlic or use 1 teaspoon granulated garlic powder
  • 1 tablespoon fresh dill or dry
  • 1/2 teaspoon dried basil
  • Mix all together in a bowl except for salmon and set aside.
  • Topping:
  • Homemade Greek Dressing recipe or use your favorite bottled Greek Dressing
  • 1/4 cup sliced Kalamata olives
  • 1/4 cup crumbled feta cheese
  • 1 cup cherry or grape tomatoes cut in half
  • 1/4 or more feta cheese crumbled
  • 4 pepperoncini
  • Additions You May Like to Use:
  • diced red onion

  • chopped and seeded cucumbers
  • chopped fresh garlic
  • mango, chopped
  • green bell peppers,
  • pineapple
  • papaya
  • avocado

Instructions

  1. Brush each piece of salmon with the olive oil mixture.
  2. Saute, bake, air fry, or grill salmon.
  3. Make the Salad Topping:
  4. In a medium-sized bowl add the vegetables you prefer into the bowl toss with around 1/3 cup of the dressing.
  5. Assemble:
  6. Top the cooked salmon with the Greek salad and sprinkle with feta cheese along with one pepperoncini.
  7. Cooking Methods:
