I love this during the hotter weather. I tend to eat lighter but still want a healthy great tasting almost salad type sandwich. You can add whatever you like. I stick to a pretty much vegetarian style open faced pita.

Sliced Avocado sprinkled with lime juice
Sliced Plum tomatoes
Granulated garlic, salt, pepper
Extra Virgin olive oil
Options: sliced peppers, olives, cold cuts, tuna, fresh spinach leaves, chopped celery, shredded zucchini,
Place the pita on a baking sheet adding sliced mozzarella on one, sprinkle with a little garlic. Bake in the oven until cheese melts at 400 degrees. Remove from oven.
Place the avocado slices on the cheese, tomatoes, cucumbers and anything else you like. Drizzle with olive oil, balsamic vinegar. Sprinkle with a little salt, pepper to taste and serve.
