This is a delicate cake like pancake recipe that is buttery and soft. Amazing for breakfast brunch or a dessert
1/2 cup flour
1 1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 stick butter
1/2 cup sugar
1 teaspoon pure vanilla extract
1/2 cup milk
3 or 4 whole strawberries sliced
strawberry jam warmed
Preheat oven to 350 degree
Cream the sugar and butter together until light and fluffy. I beat this for at least 4 minutes using a heavy duty mixer, one of the most important steps (she did this by hand for at least 7 to 8 minutes. Add the eggs, milk, vanilla and salt. Mix 2 more minute until well blended on medium speed. Carefully and slowly beat in the flour and baking powder mixing until will blended and smooth. Around 1 minute. Pour into heavy buttered greased 8 or 9 inch square or round pan also floured pan. Bake at 350 degree until middle comes out clean with a toothpick around 25 to 35 minutes. Top with sliced strawberries and warmed jam.
All ready for the oven
Don't forget to trim the fat off first
1 lb fresh mushrooms cleaned and rinsed
1 can beef mushroom gravy or mushroom gravy
pork tenderloin sliced in half not all the way through and pounded with meat mallet
cream cheese spread
Italian seasoning ( fresh rosemary, thyme, oregano, basil) use fresh herbs if you can
fresh spinach leaves, broccoli rabe or escarole
garlic cloves halves
olive oil extra virgin
bread crumbs Italian flavored
Lay the sliced and pounded pork tenderloin flat on a cutting board. Spread a thin layer in the center with cream cheese. Season with granulated garlic, salt, pepper and a little Italian seasoning. Drizzle the loin with extra virgin olive oil using around 2 tablespoons. Keeping everything in the center, place prosciutto in a single layer, then pepperoni and provolone. Top with spinach, sprinkle with more garlic, a little of cayenne pepper to taste, salt and pepper to taste then add mozzarella on top. Roll as tight as you can and secure with toothpicks. Place in a 13 x 9 deep roasting pan. I line mine with parchment paper. Drizzle more olive oil on top, lemon juice a few teaspoons over the top. Pour around 1/4 cup white wine in the bottom with halves of garlic cloves. Season with more Italian seasoning on top.
I now put this in the refrigerator covered for up to 3 hours or overnight. When ready to cook, pour gravy over the top with mushrooms then sprinkle with Italian flavored bread crumbs. Drizzle a little more olive oil on the bread crumbs.
Bake on 350 degrees hot oven for around 1 hour or until fork tender.

Jalapeno Popper Dip Recipe 1/2 cup mayonnaise
4 ounces cream cheese
1 can drained green chilies
1/4 cup jalapeno peppers chopped or more if you like hot
1/2 cup shredded sharp cheddar
1/4 cup parmesan cheese
1/2 teaspoon granulated garlic
freshly grated pepper to taste
Optional: 1/4 cup crumbled cooked bacon
Mix evenly in a bowl, pour into a oven safe casserole dish.
Spread with topping below. Bake at 350 degrees for 25 minutes or microwave for 5 minutes until cheese melts.
1/2 cup Italian flavored bread crumbs
1/4 cup parmesan
Banana Spice Cake Mix Recipe
1 cake mix spice cake flavored (18.25 size)
1 box instant vanilla pudding
3 mashed very ripe bananas
1 cup water
1/4 cup oil
Place in a large mixing bowl and beat around 4 minutes with electric beater. Pour into 13x9 greased pan or bundt pan. Bake in preheated oven at 350 hot oven until middle comes out clean with toothpick around 50 to 55 minutes.
Cool completely unless making the rum glazed cake then proceed with optional rum glaze. Top with real whipped cream and cinnamon sugar if you like or just powdered sugar. Store leftover cake in the refrigerator.
Optional Rum Glaze Adult Topping:
1/2 cup butter
1/2 cup dark or light rum
1/4 cup water
1 cup sugar
Boil all ingredients together for 5 minutes. After cake is cooked, poke holes evenly all over the cooked cake while warm and pour this mixture over the cake. Note: The longer this cake stay in the refrigerator the better it gets.
I don't know about you but pork chops done right are wonderful. With sausage flavor since it's all pork is another bonus. This baked Italian speciality is going to wow your family or guests I promise and it is so easy to make!
Pork Chop and Sausage Bake Recipe
Italian Sausage at least 4 large links
Boneless Thick Cut Pork Chops (center cut) 3 or 4 thick cut
Cubed Potatoes 3 or 4
Spring of Rosemary, fresh parsley, basil, oregano to taste
Bells Peppers sliced around 4
Salt Pepper to taste
Italian Style bread crumbs
Pinot Grigio white wine
Prepare your pan with oil spray. Place the potatoes and some peppers on the bottom drizzling with olive oil.
Add salt and pepper just a little. Top with sausage and pork chops and more peppers. Sprinkle with Italian flavored bread crumbs and cheese. More salt and pepper with fresh herbs on top. Drizzle the top with more olive oil. Slowly pour 1 cup of wine not touching meat in a corner of the prepared baking dish. Cover with foil and bake at 400 degree hot oven until the potatoes are soft and the rest is browned around 1 1/2 hours depending on your oven.
Egg in a Hole Breakfast Recipe
Salt, pepper to taste
Using your favorite bread and a biscuit cutter, make a hole in the center of the bread. (Easier to cut when the bread is frozen)
Heat the pan over medium heat with a few tablespoons of butter.
Place the bread in the pan then crack the egg into the center to fill the hole. Let the egg cook and bread crisp up on the bottom.
Salt and pepper the egg, the flip it over for a few seconds till egg is set.
I also place the cut out circles of bread in the pan and toast it in the butter. Serve with your favorite meats, breakfast potatoes or just by itself.
Pasta Alfredo Casserole Recipe
1 pound of spiral macaroni cooked to package instructions drained
2 - 10 ounce jars store bought of Alfredo sauce or use recipe below
8 ounces of sour cream
1- 8 ounce container of whole milk Ricotta
2 eggs beaten
1/4 cup blended parmesan and romano cheeses
1 1/2 cups shredded whole milk mozzarella
1 teaspoon granulated garlic, parsley, oregano
salt, pepper to taste
In a greased 13x9 pan, add half the pasta and toss with alfredo, sour cream. Stir in the eggs, parmesan romano cheese, half the mozzarella, spices and Ricotta. Stir all together. Add the rest of the mozzarella on top. Bake at 350 until browned and bubbly.
Alfredo Sauce Homemade
2 cups heavy cream
1/2 cup butter
1 cup parmesan cheese
salt, pepper, cayenne pepper, granulated garlic, Italian seasoning to taste
4 oz cream cheese
Place this all in a medium size saucepan bring to a boil. Use for this recipe or on your favorite pasta.

I decided since it was such a big hit to try it with Bing Dark Cherries. I had recently had a huge bag of them I could easily eat without even thinking about baking with them. I had to put some aside just to try making a cherry loaf since I am such a big fan of Bing Cherries. I promise you this won't disappoint all the cherry lovers out there, What a delicious cake this made, The loaf is dense like a quick bread but delicious and perfect with tea or coffee.
Bing Cherry Loaf Recipe
1 cup pitted bing fresh cherries sliced
1/3 cup softened butter
1 cup sugar
3 tablespoons lemon juice
1/2 cup milk
1 teaspoon baking powder
1 1/2 cups flour
1 tablespoon freshly grated orange or lemon peel
1/2 teaspoon salt
Glaze after baking:
1/4 cup sugar
2 tablespoons lemon juice
Heavily grease a loaf pan and I would also use non stick and flour.
Heat oven to 350 degrees.
In a large bowl using an electric mixer, beat the sugar and butter together a few minutes. Add the eggs, lemon juice till blended.
At a little at a time add the flour, salt, baking powder and peel to this wet mixture until blended. Fold in the cherries.
Bake for 1 hour or until middle is firm using toothpick method.
Cool 3 or 4 minutes and invert onto cooling rack or wax paper before adding lemon/sugar glaze topping.
This is what I do to make and Italian style sausage helper. I have never made anything from a box before. This is a simple pasta dish that I usually make the sauce, freeze it then all I have to do is make the pasta and top with cheese when I get home from work. Easy and looks like I cooked all day

Make the sauce with the above link instructions. Boil the pasta to package instructions. Drain, add to the sausage sauce, top with shredded cheese, grated cheese (I use a blend of Romano and Parmesan) serve with garlic bread and a side salad.
Baked Banana Chocolate Chip Donut Recipe
2 1/2 cups of flour
2 teaspoons of baking powder
1/2 teaspoon salt
In another bowl beat well:
1 cup shortening
1 cup white sugar
1 cup brown sugar
2 cup mashed bananas
1/2 teaspoon of vanilla
1 1/2 cups chocolate chips
optional: 1 cup walnuts or pecans
Add dry ingredients to wet ingredients, mix till all are incorporated. Scoop into two donut pans well greased and 1 loaf pan or 2 loaf pans or you can make muffins. Bake at 350 for 25 minutes for donuts or 45 minutes for loaves until brown and middle is dry when tested with a toothpick.

Baked Blueberry upsidedown donuts
A easy treat that everyone loves. Flan is so easy and coconut is my favorite. It's so easy to throw together and actually amazes me when you flip this onto a pie plate how the caramel glaze is perfect and makes such an elegant dessert to serve.
1 cup sugar
1 cup cream of coconut
1 cup condensed milk
1 can coconut milk 13.5 ounce
1 teaspoon pure vanilla
Heat oven to 325 degrees. Place a 13 x 9 pan of in the oven on the bottom rack, half filled with water. (the water will have the pan you choose to set into this and needs to be around an 1 inch deep)
In a medium saucepan pan place 1 cup sugar and 1/2 cup water in it and bring to a boil stirring until sugar dissolves and then let boil until turns a light golden brown color around 10 minutes. Pour caramel into either 8 - 4 ounce ramekins individuals or use 1 - 9 inch round cake pan.
Note: I use a 9 inch Wiltons cake round pan (that is around 2 inches or so deep) to bake the flan in and is non greased.
Set aside to cool.
Blend together the rest of the ingredients whisking together until evenly mixed. This now gets poured over the caramel in the pan.
Set the round 9 inch filled pan of flan into the 13x9 baking pan that is in the oven already. Cover with aluminum foil.
Place now in the middle rack and bake for 1 hour and 15 minutes or until the flan is not wiggling in the center.
Refrigerate until completely cooled.
Score edges with a butter knife before flipping onto a plate.
Note: if using the 8 ramekins place them in a large baking pan with water and proceed like I did above baking instructions.
Slow Cooker Beef Broccoli and Rice Recipe
2 pounds thin sliced top round steaks
2 cups beef broth
1 cup soy sauce
2/3 cup brown sugar
1/3 cup cornstarch
1/2 teaspoon chili flakes
dash cayenne pepper
freshly cracked black pepper to taste
2 tablespoons minced garlic or 2 teaspoons granulated garlic
2 tablespoons sesame oil
4 cups steamed broccoli florets
White Rice cooked
Add into a bowl and mix (then into the slow cooker) broth, sesame oil, garlic, flakes, soy sauce, brown sugar and cornstarch.
Cover and cook on high 3 to 4 hours or low 5 to 6 hours. Add the steamed broccoli and serve over cooked rice.
