Strawberry Easy Pound Cake Dessert Recipe





Company coming and want to throw together something easy? Check out my deconstructed pound cake and strawberries glazed with warmed strawberry jam.



1 -  homemade or store bought pound cake cut into cubes
(Here is grandma's pound cake recipe click here)
1 container of cleaned sliced strawberries
1 jar of strawberry jelly or jam warmed 20 seconds in the microwave just to melt it
1 container of whipped cream

Place cut up cubes of pound cake into a dessert dish or mason jar. Spoon the sliced strawberries on top of the cake. Brush with with jelly. 
Just before serving add the whipped cream to the top and serve.

Pizza Dough store bought or get the recipe here (I used 2 pounds)


Pictured : Sliced Mushrooms, Pepperoni slices, cubed mozzarella

Filling suggestions:

Chopped peppers, onion, tomato, spinach, zucchini, eggplant, ham, broccoli rabe or any kind of vegetables you like chopped fine
Crushed meatballs, cooked sausage or any kind of leftover beef chopped, hotdog pieces or even any cold cut meat chopped

Cheeses Frozen cubes work best: mozzarella, swiss, pepper jack, sharp cheddar ( I cut small cubes and freeze them and add to the dough frozen
Taco filling: refried beans, loose cooked meat, sharp cheddar cheese
Chopped chicken or shredded with buffalo sauce

Directions:

Take around 3 tablespoons of dough and flatten on a floured board. Place around 1 tablespoon of any of the above meats, cheeses or vegetables in the middle. Roll them up, seam side dough.

Heat oil on medium heat. Place the rolls into the hot oil seam side down. Cook until browned on both sides. Serve hot with dipping sauces. Marinara prefered for the Italian fillings. If you do a taco filling use picante sauce or salsa.

This is a simple appetizer and you can make with whatever your family likes. Enjoy!

Poor Man's Lasagna Recipe



I love the ease of this recipe. All the same ingredients as a real lasagna but quick and easy layered with your regular favorite pasta, cheeses and meat sauce! When we were growing up mom called it poor man's lasagna because it was all thrown in one pan with less expensive ingredients. Lots of times she would use leftover sauce and meatballs from our 
Traditional Sunday Sauce meal.

Poor Man's Lasagna



Poor Man's Lasagna Recipe
(All highlighted below will lead you to those recipes) 1 box of your favorite pasta cooked to package instructions and drained (I used medium sized shells)
2 lbs of Homemade Ricotta
2 pounds ground sirloin or beef or use leftover meatballs and sausage crushed if you have any
3 - cans 28 ounce size crushed tomatoes or make homemade sauce
1 egg
1 teaspoon granulated garlic 
1 teaspoon chopped fresh or dried parsley
salt, pepper to taste
grated cheese
shredded mozzarella the more the better!

In a medium size fry pan add 3 tablespoons olive oil, 3 cloves minced garlic and hamburger or choice and fry till all pink is gone. 
Add 3 cans 28 ounces of crushed tomatoes to the pan. Cook on low simmer for 30 minutes.

Mix the Ricotta, egg, 1/4 cup grated cheese,  granulated garlic, parsley, salt and pepper to taste in a bowl set aside.

Cook and drain pasta. 

In a large lasagna pan, layer pasta, top with Ricotta, sprinkle with mozzarella, grated cheese,  add the meat sauce all over the top, Repeat ending with sauce and mozzarella to top. Bake until hot and browned top of mozzarella under the broiler for a few minutes.

Pork Zucchini Stew Recipe


I really love one pot meals. This easy stew goes along way to feed a large crowd. Great in a slow cooker when you are a busy mom or working gal. Take a look at the healthy ingredients and don't forget to get a great loaf of Italian bread to sop of that sauce! 
Pork Zucchini Stew Recipe

2 pounds of boneless pork cut into cubes for stew meat or you can use chicken or beef also
1 cup Burgundy wine (or you can use any kind of broth if you prefer)
3 tablespoon olive oil
2 tablespoon lemon juice
Salt, pepper, oregano, parsley, basil, rosemary, thyme

In a large plastic covered bowl or ziplock bag, add the wine, lemon juice, oil,  meat, add a few shakes of salt, pepper and sprinkle a little of all spices over the meat to coat. Refrigerate overnight.

Next day prepare your vegetables:

3 zucchini washed and cut into chunks
3 peeled white potatoes cut into slices of cubes
1/2 cup carrots
2 cups fresh, canned or frozen green cut beans,  peas or both
1 cup mushrooms (optional)
1 - 28 ounce can or whole Tomatoes put through the food processor until slightly chunky
1 small can tomato paste
1/2 cup water or more if gets too thick at the end
4 cloves minced garlic
1/2 teaspoon each basil, garlic powder, parsley
salt and pepper to taste
pinch of cayenne pepper

When ready to start cooking drain meat into another bowl reserving the juices.
In a large dutch oven saucepan add two teaspoons of olive oil, place meat in the pan and brown ( have a cover handy if it's starts to spatter from the wine). Add garlic being careful not to brown it, as it will get bitter. Saute for a few minutes. Add the tomatoes,  paste, water, reserved wine and the spices. Simmer 1/2 hour, then add all the vegetables you plan on using. Simmer on low for 2 1/2 hours or until sauce is thick. If it gets too thick add more water or wine.  Serve with thick hard crust Italian bread.

Chickpeas and Orecchiette Recipe



Growing up I use to love this dish. Mom would alternate chickpeas or just use peas. I love both dishes but this one is my favorite. Comfort food all the way. If you are looking for an authentic style Italian dish you just hit the jackpot! I love the sausage combined in the sauce to make this hearty. Reminds me of an Italian style chili. Chickpeas and Orecchiette Recipe

1 small can tomato paste
3 cloves minced garlic or 1 teaspoons granulated garlic
extra virgin olive oil
Italian herbs
cayenne, salt , pepper  to taste
loose Italian hot or sweet sausage around 1/2 pound
1/2 pound Fresh homemade orecchiette pasta cooked and drained or make store bought to package instructions and drain
1 teaspoon fennel seed
3 cups or more fresh cooked or canned chickpeas
4 cups of chicken broth I make mine and freeze it till needed
1/2 cup grated cheese

In a large sauce pan, add around 1/4 cup olive oil, garlic and tomato paste saute for a minute stirring frequently. Add the chicken broth. Add the loose sausage raw into the pot, then the fennel, herbs, salt, pepper and cayenne pepper to taste. 

After the sauce simmers for around 1 hour and gets thicker and not too soupy (most of the liquid will boil away) add the pasta and grated cheese.  Serve with more grated cheese on top.

Zucchini Tomato Cupcake Quiche Recipe


You may have remembered my Youtube Video on this quiche? Well if you missed it check it out below. Then follow the link for this great recipe and use cupcake tins to make individual quiche. Perfect for an appetizer when you want to make something special. The perfect bite size quiche that takes hardly any time to make.

Using the recipe in the above link,  spray your cupcake tins with cooking spray for easy release.
Line each tin with pie dough, fill and bake at 350 degrees until the middle is set around 35 minutes.

NOTE:
The filling makes at least 16 individual quiches. You may need two store bought pie crusts to use all the filling up with.

Slow Cooker Bourbon Beef Slider Recipe


The easiest way to feed a crowd for family, friends and outings. Bring on a pot of great beef with bourbon and watch how fast it's gone! Don't forget the slider buns, they are fun and easy to stack!


 Slow Cooker Bourbon Beef Slider Recipe

2 1/2 pound Beef Roast
2 shots bourbon
1 cup catsup
2 tablespoon brown sugar
2 cloves minced garlic
2 tablespoons maple syrup
2 tablespoons worcestershire sauce
salt, pepper and cayenne pepper to taste
2 tablespoons cider vinegar
1 teaspoon cumin
pinch of allspice
olive oil
1/2 cup beef stock

Slider rolls or the kind you like
minced garlic
garlic flakes

Place the roast in your slow cooker.  In a bowl mix all the rest of the ingredients except the oil.
Drizzle some oil over the meat. Pour the mixture barbecue bourbon sauce over the meat.
Cook on low for around 8 hours or high for 6 hours.
Split and butter rolls, add some minced garlic and garlic flakes. Broil until browned.

Place the beef on the toasted garlic rolls and serve.


Chocolate Pumpkin Spice Bar Video Recipe



I used my fresh pumpkin puree that I had from last year in the freezer. Thawed it out to add to this cake mix. The chocolate and pumpkin went fabulous together along with a little 

cinnamon to kick up the flavors.
  Using a cake mix made this so easy!

Chocolate Pumpkin Spice Bar Video Recipe

Here is a great recipe starting with a cake mix! Use any kind you like I love that the chocolate and pumpkin went so well together!

You will need chocolate chips around 1/2 cup of more if you like
1 Chocolate Cake mix any kind you like
1 - 15 ounce can of pumpkin puree (or 1  3/4 cups fresh as I used)
Cinnamon around 1 teaspoon
1 Egg
Powdered sugar or you can use canned cream cheese frosting after cooled
Brownie pan 12x9 in size

Mix, pour the batter into a greased brownie pan.
Bake at 350 degrees until the middle is set. Cool. Frost or sprinkle with powdered sugar. Just follow the recipe link above for complete instructions.  I made pumpkin spice cookies with a cake mix also.

Loaded Mashed Potato Casserole Recipes


A real easy way to make those mashed potatoes a huge hit. Loaded with bacon and cheese sure to be a favorite for the bacon cheese lovers. These are a great addition to any meal for a side dish to wow your family and guests!

Loaded Mashed Potato Casserole Recipes

Topping:
1/2 pound of bacon or more to your taste
8 ounces shredded blended cheese

5  white boiling potatoes peeled cut up and boiled till soft
 1/2 teaspoon minced garlic
 4 tablespoons sour cream
 3 tablespoon cream cheese
 1 stick of butter
1/2 teaspoon each, parsley, garlic powder, salt, pepper
1/4 teaspoon oregano, basil and dash of cayenne pepper
1/4 cup of grated Parmesan cheese
 1/2 cup milk, heavy cream, half and half (light or regular any will work fine)

In a heavy industrial mixer, add cooked potatoes, sour cream, cream cheese, herbs, 1/2 stick of butter and garlic. Beat till smooth, add a little milk at a time to reach desired consistency.  Top with a tablespoon of butter and more parsley and cheese. Bake in the oven on 400 degrees or microwave until heated all the way through. Top with bacon and shredded cheese. Keep in oven until cheese is melted.

Baked Zucchini Parmesan Casserole Recipe


What a delicious casserole dish this is. Usually this is one of my go to recipes for any picnic outing. Picnics never have enough great side dishes. This one will knock it out of the park with everyone wanting more and the recipe.


Marinara Sauce Recipe Click Here or use store bought

2 pounds zucchini sliced 1/2 inch thick
Italian flavored bread crumbs
Grated cheese
2 Egg whites beaten
salt, pepper to taste
Mozzarella shredded
Garlic granulated
Olive oil

Optional: you can add crushed sausage and meatball in between layers to make this a meat lovers casserole.

Dip slices of zucchini into beaten egg whites then into bread crumbs. Place on a parchment lined cookie sheet and bake drizzled with olive oil on 400 degree oven for around 20 minutes.
In an oil sprayed casserole dish. Layer the zucchini with marinara sauce, sprinkling of granulated garlic, salt, pepper to taste,  grated cheese, shredded mozzarella, keep building layers, until all the zucchini is used in the casserole.  Top with more shredded mozzarella.
Bake until cheese is melted, browned on top and bubbling.

Easy Casserole Pot Pie Recipe


If you want to see the family eat leftovers quickly, here is the perfect recipe for them. This pot pie is so easy the kids can help make it. You can even buy all the ingredients and assemble before leaving the house and just pop it in the oven when you get home. I have to warn you though, make two it's that good!

Easy Casserole Pot Pie Recipe

2 cups leftover chicken or turkey
2 cups mixed frozen vegetables
1 12 ounce jar chicken or turkey gravy
1 box refrigerated store bought pie crust

Place one pie crust into an oil sprayed casserole dish ( I used a 9x9 square).
In a bowl mix together the chicken, vegetables and gravy.
Pour on top of the pie crust into the casserole dish. Top with the last crust, Use a fork to crimp edges.
I like to brush the top of the crust with butter before baking.  Poke a few holes on the top. Bake in preheated oven of 400 degrees until the top is browned, around 25 minutes.

Pistachio Funfetti Cake Recipe



Vintage recipe been making since the 1970's. Love this still today but made it a little more fun this time. Using a funfetti cake mix makes it a festive cake and fun to eat. The kids and young at heart 

love this one!  Pistachio has always been a favorite of mine.







Pistachio Cake Recipe

1 package or yellow funfetti cake mix or yellow cake mix any kind
4 eggs
1/2 teaspoon almond extract
1 package instant pistachio pudding
1/4 cup oil (I use canola)

Optional:  4 drops green food coloring,  1/2 cup chopped pistachio. The pudding makes it green
(I don't use either)
Note: you can use whatever cake mix you like and add 1/4 cup mixed colored sprinkles to the batter also

Place all in a bowl, using an electric mixer beat for 3 minutes.
Pour into a 13 x 9 greased pan or bundt pan.
Bake 350 degrees until the middle comes clean with a toothpick.

Frost or dust with powdered sugar.


Frosting:

1 - 8 ounce tub of whipped topping or heavy cream sweetened and whipped
1 pistachio instant pudding

Mix both together until blended evenly, spread on cooled cake. Refrigerate. I like to decorate the top of mine with whole pistachios and some chopped or shaved chocolate.

Food Hack and Tip Ideas





Quick homemade pickles? Save the brine from the old pickle jars. Place the sliced cucumbers in the brine and set in the refrigerator for a few days. You can also add carrot, cauliflower, green beans and garlic. To speed up the process par boil the vegetables first.

To crisp up wilted limp vegetables add them to ice water. Great for celery, lettuce, spinach, asparagus. 

Have scorched cookies or toast? Use a microplane to scrape off the bottoms.

Use an egg slicer to slice strawberries and mushrooms

Don't throw those shower caps away they make perfect bowl covers

Use your potato peeler to make curls with carrots, dark chocolate, lime or lemon. Great on vegetables like beets, parsnips and rutabagas to make crisp vegetable chips.

Use oil spray in your measuring cups so things that are sticky like honey or corn syrup it will come right out.

Use your waffle iron for more than making waffles. Try carrot cake batter, brownies, hash browns, corn bread and scrambled eggs. Works great!

Place herbs into an ice cube tray and freeze. Drop into stews, soups and other recipes all year long.

Green bananas? Place in an oven at 350 degrees for 5 to 7 minutes they will quickly ripen if you need to make something like banana bread. 

Use old egg crate cartons to start and inside herb garden. Makes a great gift too!

Use a pointed tip squeeze bottle (you can save and use an old cleaned ketchup bottle) to make character pancakes for the kids. Just add the prepared mix to the squeeze bottle and draw as they are cooking on the griddle. If you really want to have a quicker method, use a metal cookie cutter, fill with batter and cook on the griddle. 

To make sure your avocado is ripe, remove the stem if brown it's over ripe, light golden color it's ready to eat.

For s'mores on the grill, pre assemble using a piece of aluminum foil. Lay down the graham crackers, chocolate and mini marshmallows in the oil sprayed foil, seal. When ready place on the grill. A perfect dessert. Also great when you add a sliced banana.

Use metal cookie cutter shapes to make your fried eggs prettier. The shapes can be fun.

Make stuffed pizza using refrigerated dough. Roll, fill and bake. Dip into pizza sauce after baking.

To make perfectly round hamburger. Roll the hamburger onto wax paper and cut them out with a glass.

Use a cookie cutter for on top of  newly frosted cakes, fill with sprinkles to keep the shape of whatever you use, great  for using age. The cutter makes a perfect shape.

Do you use creamer? Those tall bottles make great dispensers after cleaned for chocolate chips, mini cookies, crackers and nuts to store them in.

Use molds to make fancy shaped fudge during the holiday.

Wear disposable gloves when mixing meats by hand. Save you lots of time cleaning up.

Did you know you can freeze eggs up to one year? When your ready to use frozen eggs, thaw them overnight in the refrigerator or under running cold water. Use them as soon as they are thawed. 

Tint your cake batter with corresponding Holiday colors. Bake into a brownie size pan. Cool, cut into shapes like shamrocks, red stars, pink or blue baby theme, Christmas trees. Make another raw batter and drop the cooked shapes into the batter. When you slice the cake you will have a great surprise inside.

Place marshmallows inside your brown sugar bag, just a few that will keep it from getting hard.
