Oreo Graveyard Cheesecake Recipe

 

Probably the spookiest cheesecake you will ever eat. Hot Fudge and Oreo  Graveyard Cheesecake a delicious addition to your Haunting Halloween menu. 





You will need:

Store bought frozen cheesecake plain or make homemade click here for recipe
Chocolate  stuffed Oreos (fudge middles) around 6 or 7 crushed in food processor
1 jar hot fudge sauce any brand warmed
1 package of Milano Milk Chocolate cookies or homemade recipe for Milano cookies click here

Garnish: Use assorted Halloween picks, bones and candy eyes for decorate
Toothpicks

Assembly:

Pour warmed fudge on top of cheesecake. Add crushed oreos on top. Decorate with candy bones, picks etc.
Take a toothpick and using warmed hot fudge write R.I.P. on each cookie and stick inside the cheesecake.

Halloween Italian Meatball Pumpkin Recipe


One big pumpkin meatball to share with the gang for the Halloween get together. Isn't he festive?

Your favorite meatball recipe or use mine click here
Sunday sauce store bought or use mine click here
Fingerling carrots you will need two one for the stem and half for the nose
Pitted  black olive slices any kind
1 Bell pepper cut into the mouth and outer ridges of the meatball

Mix the meatball mixture. Shape into a pie plate to mound into a large ball. Add the sauce to the top of the meatball mixture. Add the stem, cut out the teeth from the pepper ring. Use some for the eyes.

Bake at 350 until the meatball is cook all the way through around an hour or more.

Beer Stew Recipe


Most of the stews I make have wine. This one I used beer and the meat just melted apart. Great tenderizer and the taste was awesome. I was pleasantly surprised on this drunken stew. Get the best crusty bread ready to dip this amazing sauce in!


Beer Stew Recipe

3 pounds boneless pork, beef or chicken
4 cubed potatoes
3 zucchini cut
3 plum tomatoes cubed
1 cup peas
1 cup sliced or finger carrots
1 stalk celery
1 pound mushrooms
1 pound green beans cut
1 can crushed tomatoes
2 sliced bell peppers
1/2 teaspoon fennel seed
1 teaspoon each Italian seasoning, granulated garlic, salt, pepper
cayenne pepper is optional to taste for a little heat
1 - 28 ounce can crushed tomatoes 
2 - 12 ounce cans beer
water if needed if too thick

Dump everything into a huge saucepot. Simmer on low for 3 hours or until meat falls apart and sauce is thickened. 
NOTE: You can also use a slow cooker on high for 4 to 6 hours or low 6 to 8 hours but only use 1 can beer. 

Pumpkin Cream Dessert Recipe


This is the perfect dessert for a crowd. Either using a big trifle bowl or making individual dessert cups, this dessert will feed the whole gang! Creamy cheesecake filling and one the of easiest and festive desserts you will make for the season

Cake:

Spice cake mix (1 package 18.25 ounce size of any brand) you can use other flavors also if you like

1 small package instant vanilla pudding
1 cup pumpkin puree
1/2 cup oil
1/2 cup water
3 eggs
1 teaspoon pumpkin pie spice or cinnamon

Mix all in a mixing bowl. Pour into a greased 13x9 sheet cake pan. Bake on 350 degree preheated oven to package instructions. Completely cool. Cut cake into 1 inch cubes.

Filling:


1 container whipped topping to equal 2 cups or whipping cream whipped

2 packages  instant pudding cheesecake flavored (instant pudding mix)
2 cup cold milk
2 tablespoons whipped cream cheese
Beat together the pudding, cream cheese and milk till set, then fold in the whipped cream. Set aside.

Garnish:

1 cup crushed cinnamon graham crackers

Optional: 1/2 cup chopped pecans and 1/2 cup crushed toffee bits

Using either a huge glass trifle bowl or individual dessert cups, layer cake, pudding, cake then ending with a garnish of crushed graham crackers, pecans and toffee bits on top.

Pumpkin Spiced Caramel Latte Recipe


Here is a soothing to say the least cup of wonderful pumpkin spiced caramel latte. So easy to make. Just blend the ingredients and microwave till hot. What more can you ask for? 

Pumpkin Spiced Caramel Latte Recipe

2 cup milk
1 cup water
2 teaspoon instant coffee
1/2 teaspoon  cinnamon or pumpkin spice
2 tablespoon pumpkin puree
1 tablespoon caramel syrup ice cream topping
1 teaspoon pure vanilla extract
3 tablespoons sugar or other sweetener
Whipped cream for garnish and caramels unwrapped

Combine the milk, tablespoon of caramel syrup, water, coffee, spice, puree, vanilla, sugar in a blender until mixed and blended together evenly. Pour into microwave proof cups and microwave for 2 minutes until hot. Top with whipped cream and garnish with caramels on top. Also for adult beverage add a shot of Bailey Irish Cream or Kahlua on top before adding the whipped cream.

Halloween Ghoulish Meatloaf Italian Style Recipe


Here is one the kids will love. Getting them to eat meat sometimes as a child isn't easy. This is a fun way to prepare meatloaf especially around Halloween. Try the recipe in individual cupcake tins.
Fun to make and delicious to eat. Italian style of course!




Italian Parmesan Style Meatloaf


1 1/2 pounds ground beef or ground turkey
2 eggs, beaten
3/4 cup dry Italian style flavored bread crumbs
2 pieces of Italian bread moistened with water then squeezed  out also remove the crust
1/4 cup tomato sauce in a can and 1/4 cup more for the top
1/4 grated parmesan cheese
1/4 teaspoon of cayenne pepper
2 teaspoons Worcestershire sauce
2 cloves of minced garlic
1/2 teaspoon garlic powder

2 bell peppers sliced in rings and use a sharp knife to cut the teeth 
Store bought or homemade tomato sauce
Black or Green olives for garnish

Preheat oven to 350 degrees
In a large bowl, mix together ground beef or turkey, eggs, bread crumbs, grating cheese and sauce. Add garlic powder, half the diced peppers. Press into a large pie plate to form a round ball or use a cupcake tin for individual ghouls. 
Pour sauce over the top. Decorate with pepper rings and use olives for the eyeballs.

Note:  I think black olives with red pepper centers would have looked better, I didn't have them.

Bake in the preheated oven approximately 1 hour or until browned and crisp around the edges.

Semi Homemade Pumpkin Cake Peanut Butter Chip Recipe



Whenever there is a cake mix involved I already know it's a winner for me with my busy schedule!


This is my go to recipe when I have pureed pumpkin and froze it for the  fall desserts. I love how easy this is using a cake mix. You can frost it if you like or even use other kinds of chips like white or regular chocolate chips. I like the addition of peanut butter chips in this it's a nice change of pace of course you can add white or chocolate chips if you like them better.
Pumpkin Cake Mix Peanut Butter Chip Recipe

15 oz of fresh pureed pumpkin or 1 can canned pumpkin puree
1/2 teaspoon ground cinnamon
1/4 teaspoon allspice
1/8 teaspoon ginger
1 (18.25 ounce)  spice cake mix or (yellow cake mix  add double the  spices above if using yellow cake mix)
1/4 cup water
1/2 cup oil
2/3 cup sugar
4 eggs
1 teaspoon vanilla extract
2 cups peanut butter chips

Garnish Powdered Sugar

 Preheat oven to 350. Grease a bundt pan heavily. Mix all ingredients till well blended.  Place half the batter into greased pan top with half the chips, more batter then chips swirling into the batter after sprinkling on top.  Bake at 350 till center is firm and toothpick test is clean, around 45 minutes.  Cool cake completely before dusting with powdered sugar as a garnish.

White Chocolate Pumpkin Blondies Recipe



Just when I thought I made every pumpkin recipe in the past that I love and this one comes along! It's a few simple ingredients to throw together you usually have in the pantry even without the chocolate in them they are awesome!

White Chocolate Pumpkin Blondies Recipe

1/3 cup butter
1  cup sugar
1 egg
1/2 cup pumpkin puree (slow cooker recipe click here)
3/4 cup flour
1/4 teaspoon nutmeg
1 teaspoon cinnamon
1/4 teaspoon ginger
1 cup white chocolate chips

Whip the butter and sugar together for 3 minutes with electric beater. Add the pumpkin, egg to the sugar mixture. Add all rest of ingredients to combine except chips. Fold them in last.
Line a brownie sized pan with parchment paper and spray with cooking oil also.
Spread out on the paper. Bake at 350 until middle is set using the toothpick method around 35 to 40 minutes. Cool completely cut into bars.

Best Ever Apple Muffin Recipe


It's that time of the year when apples, cinnamon and baking comforting treats for fall come out of the oven. The wonderful smell they have baking makes it hard to wait to eat them! Great plain or slathered with butter. Cold or warm,  this is my go to apple muffin recipe.
Simple and utterly delicious, moist and tender.


Best Ever Apple Muffin Recipe

1 cup buttermilk
2 cups flour
1 tablespoon cinnamon
1/2 cup softened butter
1/2 cup white sugar
3/4 cup brown sugar
1 egg
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
2 cups chopped mcintosh apples or other baking apples

Line cupcake tin with 12 wrappers (paper liners) I like to spray them with oil spray also. Preheat oven to 375 degrees.
Cream the butter white sugar and 1/4 cup brown sugar.  Add egg then buttermilk mixing well.
Stir in the flour, baking powder, salt, baking soda and cinnamon. Fold in the apples.
Scoop batter into cupcake tin and sprinkle the remaining brown sugar over each one. (you can add cinnamon to the 1/2 cup sugar if you like also around 1/2 teaspoon)

Bake muffins for 25 to 35 minutes, use a toothpick in the center to ensure they are fully baked.

Hurricane Tips and Preparation



Amazing what can be in store when a storm is coming your way. Being prepared is key. If you are in an area that has tropical storms, this post will give you some of the important
tips to follow.





As we were waiting in 2016 for Hurricane Matthew to hit on October 6th and 7th, we began preparing the shutters on the doors, getting everything necessary to stay inside for a few days to include non refrigerated foods, lots of water. Fill the bathtub, drain the pool 2 or 3 inches. The unplug anything that could be a possible power surge like laptops, any extra tv and other electronics that wont work in a power outage. We packed just in case putting  all our valuables in a plastic container to include all important paperwork needed after the storm. Don't forget any medications. Also place things higher in the home wrapped in plastic that can get water damage. This is a bit stressful to say the least. I like to cook when I am stressed and knew if it was coming I was losing alot so I started to make what I could. Some of them in the photo below.





The storm strengthened and Melbourne Florida (which is Brevard County) became the target of this huge storm. The news continued to say it would make landfall here. 

Now the valuables, packed suitcases ready to go and pets packed in pet carriers were all we took to evacuate. House was secured. It's always a guessing game on where it lands but packing a category 4 or 5 strength, there was no way we wanted to take the chance. 
Back in 2004 we got hit by Jeanne and Frances. Both storms damaged our home with a total of around 50k in loss. Grateful it was only material things and we were not harmed as we stayed. 
The storm sounded like a freight training going through and pounding against the house for over 19 hours. This time I wasn't staying for that stressful night and praying for the best outcome for everyone in our state.
We did evacuate and drove to Fort Myers and stayed with family. 

Our cousin's home, Karen and Bill, they were gracious hosts and offered to accommodate our family in their home. We truly  are blessed to have them in our lives here, we appreciated their hospitality. My husband, son Curt,  daughterinlaw Jenni and both grandchildren Antonio and Talia packed up and left. We also brought all three cats in carriers. Trina, Fonzo and Regina. Remember in storms hotels book quickly make arrangements early you always cancel if you don't have to evacuate.

My other son Chad stayed behind and secured his home and waited it out. He is fascinated by storms as a hobby and kept us up to date along with checked out home after the storm as he was completely untouched by damages.

Every time we have these storms I learn a little more on what we need more of. Batteries are never enough and flashlights. 
Water is never enough because if you have a boil water alert you use it for even brushing your teeth. I had a case for each person.
The tub should be filled for sponge baths.
Cell phone portable chargers charged ahead of time. Of course you can sit in your car and charge the battery also.
Landline phones if you have service they have to be corded
You will have no tv or internet in a power outage unless it's satellite and stays stable. Buy a portable weather radio.

Get an extra tank of propane for your gas grill to cook on.
Power outages are very inconvenient for sure, get led candles to put in the bathrooms, closets and other darker areas. 

Fill those gas cans have at least 3 - 5 gallon pails or more everyone runs out of gas at the pumps.

Cook as much food as you can ahead of time and buy ice to keep in a cooler you're going to lose it without a generator.

Don't throw out soda plastic 2 liter bottles and milk container.  Fill with water and freeze them. They will keep the freezer cold much longer.

Buy extra pet food. Kitty litter if you have a cat.
Cakes, cookies, muffins, bagels, peanut butter, jelly, tuna, bread. Get foods that do not need refrigeration.
Get disposable plates, cup, plastic forks and spoons. 
We have a gas grill with a side burner to make coffee on it in the morning. Buy an iron cast skillet and camping coffee pot.




Gas up the cars.
We got to our destination safely. Glad to report we had minimal damages, screens ripped and frame to the screen enclosure was the worst that happened and we were grateful. It took 3 days to get power back on and we had a boil water order.
The after effects are hard to deal with. Cleanup, roadblocks, no traffic lights, diversions, boil water orders, everything is closed. Remember it can take much longer to get power back. Preparing is key.

The beach side had massive damage and this storm continued North damaging one area after another. These storms should never be taken lightly. Prepare, be safe and listen to direction. Life is too precious to take chances. Thankful they were wrong and it stayed on shore no one is ever certain what the outcomes will be.

Hope this helps someone out there that ever has to prepare for a storm and new to Florida or other places Hurricanes can happen.

Mini Muffin Apple Scones Recipe



If you're a hurried baker like me but love scones, you will love the ease of this recipe. Scones with apples and cinnamon all with the big flavor and texture of scones but without the fuss of rolling and cutting. Add them to this mini muffin pan and out comes the tastiest little morsel ever!  Often the larger scones are too much for me and these are perfect with a good cup of tea or coffee.
You can either dust with powdered sugar, dip them in a caramel sauce or drizzle some frosting over the top whichever way you choose these will be a go to recipe. Did I tell you I love these?



Mini Muffin Apple Scones

2 cups flour
1/2 cup white sugar or brown
1/2 cup heavy cream or whole milk
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 egg
1 cup chopped apples
1/2 cup softened butter
1 1/4 teaspoons cinnamon
1 teaspoon vanilla

Optional: heavy cream and sugar mixed to brush before baking

Preheat oven to 400 degrees. Spray mini muffin pan with oil spray.
Beat the sugar and butter together till light. Add the cream or milk , vanilla, egg and fold in the dry to this mixture until blended adding the apples last.  
Drop around 2 tablespoons in each muffin cup and bake at 400 degrees for around 20 to 25 minutes or till starting to get brown around edges.

Cool and either top with powdered sugar,  drizzle with frosting or dip in caramel sauce.
