Creamy Tuscan Chicken Florentine

Tuesday, January 3, 2017
Here is a creamy sauce cooked all one skillet with the most tender delicious chicken and super easy made in minutes.

The sauce is made with heavy cream, butter,  of course, garlic, then with the addition of sun-dried tomatoes, the sauce packs a powerful flavor that makes this fork-tender chicken dish spectacular.

In the end, a bit of Pecorino Romano cheese just adds that bonus to the whole dish and compliments all the sauce ingredients.

Tuscan Recipes

If you were looking for an authentic Tuscany from Italy recipe this isn't one of them.

Tuscan cooking is characterized by having simple food, not covered in heavy sauces.

Cooking is done with olive oil (not butter, as is used further north.)

Olive oil is used as a salad dressing, is poured over bread, and is used in soups and stews.

Beans are a staple in Tuscany using basil, oregano, peppers, fennel, garlic, and rosemary.

Using the heavy cream and thick sauces isn't one of the ingredients you'll usually find in an authentic Tuscan meal, instead of in some parts they will use butter and garlic style lighter sauces.

This Americanized Tuscan Chicken is basically a copycat from a popular Olive Garden restaurant and slightly adapted without the pepper strips with added spinach and sun-dried tomatoes.

The recipe dish is perfect for any weeknight for the busy work week and can still get a delicious meal to serve quickly on your table.

This is a Tuscan dish made with a rich cream sauce, fresh spinach leaves, and sun-dried tomatoes

Ingredients

  • 2 boneless, skinless chicken breast
  • 2/3 cup all-purpose flour
  • 3 1/2 tablespoons unsalted butter
  • 4 garlic cloves minced
  • 1/4 cup sun-dried tomatoes (packed in oil) thinly sliced
  • 1 1/2 cups heavy cream
  • 1/4 cup Pecorino Romano cheese grated
  • 3 cups of fresh spinach leaves
  • salt and pepper to taste
  • 2 teaspoon granulated garlic powder divided
  • Optional: 8 ounces of sliced mushrooms ( I did use these) or you can use red or green sliced bell peppers for an additional change up of flavors

Instructions

  1. On a cutting board slice the chicken in half the long way.
  2. Shake each piece in a mixture of flour, 1 teaspoon of granulated garlic powder, salt, and pepper.
  3. In a large skillet (that can accommodate 4 pieces of chicken comfortably), melt the butter.
  4. Once the butter is melted add the chicken.
  5. The chicken should sear for around 3 to 4 minutes on each side.
  6. Set the chicken aside in a dish and keep warm.
  7. In the same pan add the rest of the butter with garlic.
  8. Saute this for 3 to 4 minutes.
  9. Add the sun-dried tomatoes, (mushrooms if using) the other 1 teaspoon of granulated garlic powder, salt, and pepper to taste.
  10. Stir in the cream and simmer for 4 to 5 minutes.
  11. Add the cheese, mix then stir in the fresh spinach leaves.
  12. Place the chicken back in the pan and warm gently for 4 minutes then serve.
