Italian Stromboli Recipe

Stuffed Pizza Dough rolled (or what us Italian folks call it). Stromboli is a dough stuffed with meats, cheese all rolled up into a delicious pizza roll. Pictured is mushroom, crushed sausage cooked in Sunday sauce on it, sliced peppers, mushrooms. Come enjoy one of these stuffed loaves of pure delicious comfort food. We grew up on these. Homemade Sausage Recipe

Roll  out a rectangular piece of dough (1 lb of pizza dough) out on a floured board around 1/2 inch thick. Add  cooked crushed sausage that was from Sunday sauce (or use store bought) to the center of the rolled out dough. Add any suggested fillings below. Sprinkle with cheese of choice, I used mozzarella and provolone. Note: If you add Ricotta it becomes a Calzone not Stromboli. Roll up and pinch edges. Place on a cookie sheet seam side down that is greased with olive oil. Sprinkle the top with grated cheese, drizzle with olive oil.  Bake at 400 degree hot oven until browned on top.

Italian Tuna Skillet Recipe


Dressed up a little, this classic dish is no where near what you would expect in a tuna casserole it's better than ever Italian style. The flavors are rich and delicious almost Alfredo style but even creamier.  I love the  Italian twist we put int this one and the addition of the tuna, peas adds an abundance of flavors.
Quick and easy to make in a matter of minutes!


Italian Tuna Skillet Recipe

1 pound fettuccine
3 tablespoons olive oil extra virgin
4 garlic cloves minced fine
2 cans of Italian tuna packed in olive oil drained or Smoked Salmon works great!
1/2 cup sundried tomatoes or fresh diced plum tomatoes (optional)
1/2 cup Pinot Grigio white wine
1/2 cup heavy cream
1 cup fresh peas or frozen
1/2 cup Romano/Parmesano cheese grated
salt, pepper and red pepper to taste
1 cup chopped fresh basil for garnish
Cook pasta to package instructions


In a deep non stick skilled saute the garlic for 3 minutes with the extra virgin olive oil. Add the tuna and tomatoes stir to heat them through. Add the wine and cook one minute then add the cream. When bubbles start to form, stir in the cheese, add all seasonings to taste. Fold in the peas and then toss the drained hot pasta with the sauce. Sprinkle with more grating cheese and garnish with chopped basil. 

Caprese Stuffed Portabello Mushroom Recipe Video


Easy to make. These over sized Portabello are bursting with flavor plus you have to love they are low in calories and carbs. This is a perfect lunch for all the dieters. Come join the party with this amazing caprese stuffed mushroom!




Caprese Stuffed Portabello Mushroom Recipe

2 portabello mushrooms or more cleaned
Sliced beef steak tomatoes
Shredded mozzarella cheese or if you like use any kind of cheese  that melts easy ( part skim ricotta also can be added to the bottoms to fill with tomato)
slivered fresh garlic or granulated garlic
salt, pepper to taste
olive oil
fresh chopped basil

Optional for meat lovers: chopped pepperoni, loose sausage cooked or loose hamburger seasoned and cooked, shredded cooked pork, chopped cooked chicken, crumbled cooked bacon, cooked chopped ham.

Clean mushroom to video instructions above.  Layer and fill with sliced tomatoes (use meat first if using from the options or ricotta cheese) then top generously with shredded mozzarella or cheese of choice. Drizzle with olive oil. Sprinkle with salt, pepper, slivered fresh garlic and bake at 400 degrees until the cheese is nicely browned around 35 minutes. Sprinkle the tops with freshly chopped basil.

Easy Shrimp Scampi Recipe

1 pound linguine  or vermicelli boiled al dente in salt water
2 pound deveined, large clean fresh shrimp
1 lemon squeezed
1/4 cup olive oil
1/2 stick (4 tablespoons) melted butter
3 tablespoon minced garlic
fresh chopped parsley
salt, pepper to taste
1/2 cup chicken broth
1/2 cup Pinot Grigio white wine
slices of lemons seeds removed for garnish
red pepper flakes

In a large fry pan, add olive oil and saute garlic for one minute. Add broth, shrimp, butter, lemon, salt, pepper. Simmer 3 minutes or until shrimp turns pink in color. Add the parsley, wine, simmer another 3 minutes.  Pour over cooked pasta. Serve immediately with grated cheese and red pepper flakes.

Chicken Parmesan Stuffed Zucchini Recipe



We love zucchini and try to come up with all kinds of ways to stuff it. This one is our favorite. If you have leftover roasted chicken, here is the best recipe and the kids all love it.




Chicken Parmesan Stuffed Zucchini Recipe

6 zucchini sliced lengthwise and hollowed out      
(save the insides for zucchini bread)
1 - 28 ounce can crushed tomatoes
fresh chopped basil, parsley  (around 1 tablespoon each)
leftover roasted or rotisserie chicken off the bone or any kind of cooked chicken around 2 cups

Optional: instead of cheese use ricotta cheese mixed with mozzarella, 1 beaten egg and grated cheese

Tip: if you have breaded leftover chicken cutlets or use store bought they work great also. We use the roasted to cut calories without the breading on it.

shredded mozzarella cheese
Parmesan cheese grated
salt, pepper to taste
granulated garlic
olive oil
oregano dried if you like it
1 cup white wine Pino Grigio is what I use

 Grease a 13 x9 deep baking pan with cooking spray. Fill all the hollowed out squash with some roasted chicken. Pour the tomatoes over the whole pan evenly. Generously sprinkle shredded mozzarella over the top and grated cheese. 

Sprinkle with granulated garlic, herbs and drizzle olive oil over the top lightly.
Bake the stuffed squash covered for 1/2 hour. Remove cover and bake until soft and  cheese is browned and bubbling, around an hour on 400 degree preheated oven.

Coconut Lime Pie Bar Recipe

These are one of those desserts that makes you go back for more. Refreshing, delicious summer flavor with lime and coconut. A real tropical treat that's a nice change from the all time favorite lemon squares. If you're a lime enthusiast you will love these! Thanks for stopping by, Ciao Claudia

We pretty much all have tasted lemons bars, I made one here in sunny tropical Florida, a lime version of those buttery crusted bars that everyone loves. Whether you use key limes or regular the taste of the tropics awaits you! 



This little tropical treat is much like the old fashioned lemon bars but with a twist of lime and coconut, welcome to paradise! 

 Coconut Lime Pie Bar Recipe


Dough

1 cup butter, softened
1/2 cup powdered sugar, plus more for dusting
2 cups all-purpose flour
1/2  cup sweetened shredded coconut
1/2 teaspoon ground ginger
1 teaspoon grated lime zest




Filling

4 large eggs
1 3/4 cups granulated sugar
2/3 cup fresh lime juice
1/4 cup flour
1/4 cup coconut
1/2 teaspoon baking powder
 Optional : 2 drops green food coloring

Dough:

Preheat oven to 350. Grease and flour a 9x13-inch baking pan or line with parchment paper.

In bowl of electric mixer fitted with paddle attachment, beat together butter and powdered sugar until fluffy. Stir in 2 cups of flour, ginger, 1/2 cup of coconut and lime zest. Mix until  well combined.

Press dough into baking pan and bake for 20-25 minutes or until dough is light brown in middle and browned along edges. Set aside.



Filling:

In medium bowl, beat the eggs and granulated sugar. Stir in lime juice until blended. Stir in the 1/4 cup flour and the baking powder. Add  the optional 2  drops of green food color.

Spread 1/4 cup of shredded coconut over baked crust. Pour lime mixture over top and bake for 20-25 minutes or until set and firm. 

Cool completely before cutting.

Dust with powdered sugar and cut into pie squares.

Baked Homemade Tortellini Recipe


Of course you can buy Tortellini frozen, fresh or even dried. These are pillows of perfection you will never go back to the store bought when you make your own!

Baked Homemade Tortellini Recipe

Fresh Tortellini (see below for recipe) or Frozen Store bought tortellini
Marinara Sauce Click here for recipe
Mozzarella (whole milk shredded)
Grated cheese
Parsley chopped
Boil pasta to package instructions. Drain. Add the fresh marinara sauce. Top with mozzarella and generous amounts of grated cheese. Bake for around 20 minutes until cheese melts then turn the broiler on for a few minutes until cheese starts to brown.

Tortellini Dough and filling:

2 cups flour 
3 eggs
1/2 teaspoon salt
1 tablespoon extra virgin olive oil
1 tablespoon water or more if dough is too dry

1 round 2 inch sized cookie cutter

Place the flour in a large bowl, put the eggs in the middle and add the salt, water and oil. Mix and then knead into a smooth ball, add more water if needed. Rest for 30 minutes covered. Roll dough out and cut into 2 inch circles. Add a 1/2 to less than a teaspoon of filling recipe below. Fold over like a half moon shape then join edges to make a circle. Boil pasta in salted water. Drain and add the sauce to top. Follow directions above for Baked Tortellini.

Filling:

1 cup whole milk Ricotta
1/4 cup shredded mozzarella and provolone blended cheese
1/4 cup grated cheese
1 teaspoon granulated garlic
1/4 teaspoon salt, pepper or to taste
1 teaspoon each chopped fresh parsley and basil chopped fine

mix together in a bowl and set aside

Sugarless No Bake Cheesecake Video Recipe


 A delight to make and eat this delicious easy recipe. Lower in fat and virtually sugar free. 
The perfect diabetic dessert.
Recently my son Curt was diagnosed with diabetes. I am developing recipes that are healthier and keep him from craving all the foods  with sugar so he won't be feeling he is missing out. This one's a keeper.
The smooth filling and topping was a huge success for my first try.



Sugarless No Bake Cheesecake Recipe

1 package sugar free white chocolate pudding mix you can use any sugar free pudding you like
1 cup milk
1- 8 ounce package 1/3 less fat cream cheese
2/3 cup oatmeal
2 tablespoon reduced fat margarine or use butter if you want
1 graham cracker ( yes just one for texture)
1/2 teaspoon cinnamon
Sliced strawberries or use raspberries or other low sugar fruit

Place the cream cheese in a mixing bowl beat until fluffy. Add the sugar free pudding mix and slowly add the milk beating until light and fluffy. Put in the refrigerator. 

In a food processor pulse the margarine or butter, oatmeal, cinnamon and graham cracker till fine. 
Press into a pie plate. Bake on 400 degrees for 5 minutes. Cool.

Pour the filling on top of the crust. Arrange the berries on top. You can sprinkle with a sugar substitute if you wish. 



Flounder with Roasted Vegetable Recipe


One of my favorite seafood dishes.

 Flounder with roasted vegetables a great blend of flavors to top off a mild delicious fish.


Flounder with Roasted Vegetable Recipe

Peppers thinly sliced
Zucchini cubed
Flounder around 6 pieces
Mushrooms sliced around 1 cup
Plum tomatoes sliced 4 or more
White wine 1/2 cup
garlic cloves minced 2 or 3
salt, pepper to taste
pinch of cayenne
Italian seasoning blend
Italian flavored bread crumbs
grated cheese 
extra virgin olive oil



Place the fish in a 13 x 9 pan. Top with vegetables. Sprinkle with herbs,  spices garlic evenly. Drizzle with olive oil .Top with bread crumbs. Bake at 400 for 45 minutes.
