Here is the easiest recipe for chicken and rice ever made in a slow cooker.
This is a wonderful super easy dinner without a lot of fuss.

With just a few ingredients this all-in-one pot dinner will be on your tables after a long hard day.

It's kind of mock stir fry in flavors but healthier since it has none of the oils used for frying.

The recipe can be made with either chicken or pork and requires no other sides except maybe a loaf of crusty warm bread with butter.

Slow Cooker Boneless Chicken and Rice Recipe

This is a quick easy slow cooker chicken and rice recipe for those busy weeknights when you want to come home to meal all in one pot!

Ingredients

  • 1/2 cup AP flour
  • 1 teaspoon ground mustard
  • 1 teaspoon Italian herb seasoning
  • salt and pepper taste
  • 1/2 teaspoon granulated garlic powder
  • 4 boneless skinless chicken breasts or 6 thick boneless pork chops
  • 1- 8 ounce can of mushrooms drained
  • 2 cans of chicken with rice soup, undiluted

Instructions

  1. In a large plastic bag add the flour and seasoning then add the chicken.
  2. Shake to evenly coat (chicken or pork whichever you're using).
  3. Heat a frying pan with olive oil and sear the meat on both sides for just a few minutes to brown.
  4. Pour the juice into a 6 to 8-quart slow cooker with the chicken
  5. Add the canned soup with rice.
  6. Add the mushrooms for around 30 minutes since they just need to be warmed up and not cooked all day.
  7. Set the slow cooker to high for 4 to 6 hours.
  8. The internal temperature for chicken that is completely cooked is 165 degrees and 145 degrees for pork. Use an internal instant-read thermometer to ensure doneness for safety reasons.
