Doctored Cake Mix Recipes



I love to mix and match these muffins with different toppings with one box of cake mix.


I can 24 muffins with this recipe and make an assortment of toppings that makes each one not only different but please a whole crowd wherever I bring them.


Although the maple bacon glazed and the crumb topping is the favorite of all mango muffins asked for, I always leave some plain for those picky eaters, hopefully, you know what I mean there's always one in the bunch!


Also, I always keep the nut topped ones away from any other in a separate container for those with allergies, just another helpful tip.


This mango cake mix muffin is so easy I almost feel guilty for posting this as a recipe it's so simple, but surely you can make that decision on making a mango homemade scratch recipe or this quick fix is right here when you need something in a hurry for that camping trip or outdoor summer barbecue.

Ingredients You Will Need for Doctored Cake Mix Muffins(scroll down to the printable recipe card for exact measurement)


  • any flavored cake mix
  • oil
  • mango
  • egg

Tips

  • always preheat oven
  • freeze on a cookie sheet flat then throw into freezer bags for later
  • use the toothpick method in the center to make sure it's finished baking
  • recipe can be doubled
  • these are delicious frosting with cream cheese frosting
  • bake this as a cake or in loaf pans
  • only use very ripe mango 
  • the muffins can have added fruits before or after baking on top
  • use a dollop of whipped cream on top if making a cake

Topping Suggestions

  1. Oatmeal Crunch topping: 1/4 cup all-purpose flour, 1/4 cup rolled oats, 1/2 cup packed light brown sugar, 1//2 teaspoon ground cinnamon, 3 tablespoons melted butter mix together in a bowl until crumbly top the muffins before baking. 
  2. Shredded Coconut: top with muffins before baking( you can also add nuts, chocolate chips on top) 
  3. Top with other fruits before baking: add some blueberries, or another fruit like chopped peaches, pineapple on top of each muffin before baking 
  4. Banana: Add 1 small chopped banana into the batter before baking 
  5. Cinnamon and sugar mixture 
  6. Frosting: use buttercream or cream cheese frosting if you are using these cake-like mango muffins for a party 
  7. Nuts: use nuts on top with any of the above combination IE chopped macadamia, pistachio, pecans, walnuts, toasted almonds (use sunflower or pumpkin seeds for nut allergies)
  8. Lemon Poppy Seed or Orange: Add 1 teaspoon of lemon zest to the batter before baking 1 teaspoon lemon extract and sprinkle the tops with poppy seeds(you can also use orange zest and extract) 
  9. Maple Bacon Glazed: Cook 8 strips of crispy bacon crumble and set aside. Using 1 cup of powdered sugar and 1/4 cup of maple syrup mix to combine. Drizzle the tops with glaze and sprinkle with bacon. 
  10. Powdered Sugar: Dust with powdered sugar after muffins cool
  11. Crumble Topped Muffins: 1/2 cup flour, 1/2 cup brown sugar, 6 tablespoons butter ( optional 1 teaspoons cinnamon 1/4 cup chopped walnuts) mix to combine and add this to the muffins before baking
  12. Whipped cream: serve with whipped cream and chopped mango
  13. Jam: top with jam of choice after baking with nuts and coconut

Great For Breakfast



These mango muffins are a treat anytime and certainly great for breakfast with coffee and tea.

If you want the easiest mango cake mix muffin with a variety, this is the best ever recipe! From bacon maple glazed, oatmeal crumb to just a dusting of powdered sugar on top, we have more than 5 toppings you can choose from.

Ingredients

  • 1 box vanilla, yellow, lemon, pineapple or spice cake mix 
  • 1 cup very ripe mango diced
  • 3 eggs 
  • 1/4 cup oil

Instructions

  1. Preheat the oven to 350 degrees.
  2. Prepare a muffin pan or use cupcake tin sprayed with cooking oil.
  3. Mix the cake mix with eggs, puree, and oil until blended together.
  4. Scoop into the prepared pans.
  5. Sprinkle with our variations or leave plain.
  6. Bake for around 16 to 20 minutes until set in the middle.
