Best Zucchini Fritter Recipe





When I said best ever I can tell you I am hooked on these fritters. They are delicious plain or dipped in tomato sauce as a bonus appetizer! You can eat these as a snack or side dish. Either way you just found a keeper. I love these with a little chopped bell pepper in them but you can leave it out if you want.  Easy recipe you can whip up in no time. Get out and buy some zucchini and try this recipe you won't be sorry I promise!








Best Zucchini Fritter Recipe

2 1/2 cups shredded zucchini
Optional: 1/2 cup bell pepper chopped 
1/4 cup flour
1 teaspoon baking powder
2 tablespoons olive oil
1/4 cup grated Parmesan cheese
1 egg beaten
1 teaspoon each granulated garlic, dried oregano, pinch of basil
1 few pieces of rosemary chopped 1/4 teaspoon
pinch of cayenne pepper
salt, pepper to taste

Grate the zucchini and chop the peppers if using. In a bowl beat the egg. Stir in the flour, baking powder, oil,  Parmesan cheese and seasonings.

Heat oil in a pan and fry until golden on one side then flip. Drain on paper towels. Great dipped in tomato sauce or just plain.
Note: I had a reader suggest if you have zucchini that is very wet and full of water to blot it dry with a paper towel first!
