When anyone in my house has a baked potato on their plate their most asked for toppings would be sour cream, bacon, cheese and butter.
I decided to try making this version in a big bowl so it could be used as a side dish, then everyone loved it as a dip!
Served on the side with any meal or as a dip with chips or vegetable sticks it's delicious!

This Bacon Sour cream cheese potato casserole is always a hit at ever party.
If you cut the chunks into smaller pieces or mash them, you can even use this as a dip!
Bacon Sour Cream Potatoes

4 boiled potatoes
extra crispy cooked bacon
1 cup extra sharp cheddar cheese 1/2 cup for garnish
1 cup or more sour cream
dried parsley flakes
granulated garlic
salt, pepper to taste
whole milk or cream if needed
instructions:
Boil potatoes whole till soft, remove skins. Slightly mash in a deep serving bowl.
Add the sour cream, cheese, salt, pepper to taste folding in gently leaving lumps. If too thick add milk or some cream.
Sprinkle the top with bacon and remaining cheese for garnish. Bake this on 350 until cheese melts or microwave until potatoes are hot.
