Italian Stuffed Peppers Baked

Italian Stuffed Peppers
1 cup of quick cooking rice raw
1 cup raw hamburger or ground lamb
1/2 tsp garlic powder
1/4 tsp salt and pepper
4 peppers cleaned and seeded
2 boiled eggs chopped
1 egg slightly beaten
4 tbsp of grated cheese
1 tbsp parsley
1 small can tomato sauce
1 can tomato paste and 1 cup water
mixed in a bowl, add 4 whole garlic cloves peeled
Topping :
1/2 cup bread crumbs
1 tbsp grated cheese
3 tbsp extra virgin olive oil mix all three together set aside.
1/2 tsp garlic powder
Mix eggs, hamburger, rice, spices and cheese in a bowl, stuff peppers, tomato sauce. Top with bread crumb mixture.. Take one can of tomato paste and add around a cup of water stir. Place peppers in a baking dish sprayed with pam, add the tomato sauce on the bottom if baking dish with water and cloves of garlic. Bake at 350 until tender. Spoon sauce over the peppers while baking.

  2. Looks like it did 50 or so years ago! The only difference was that Mom used green bell peppers.
    As an interesting with this receipie, without the grated chesse Mom would make a dish called Spanish Rice ...the pepper was chopped up! This is what I recall as the older brother of pegasusledgend!! Right on Sis!

  3. oh yes, my noona use to make this and, sorry to say, I would run the other way! But I grew up and I think I wiil make this tonight..maybe I'll do a Spanish spin...still have some organic lamb in freeze.......

  4. Wow this looks you think i could use goat cheese...i have some green bell peppers and left over goat cheese that i need to get rid of...I wonder if it will work?

  5. Not sure about the salt content in goat cheese sometimes it isnt a good combination when baked.
    If your going to just put it on top after baking for garnish it should be fine, just wouldnt mix with the ingredients all together...hope that helps.
