
Ziti, Sausage, and Peppers, Baked with Mozzarella Casserole

Since Labor Day is upon us and I have to work the next two days, I thought I would make a meal ahead of time so when I get home, here is a great meal and taste even better reheated! After seeing I had some leftover sausage and tomato sauce, here's what I did!
3 large red or green bell peppers cut up in long slices
1 lb baby bella mushrooms optional
2 garlic cloves minced
1 tablespoon olive oil
1 pound ziti or your favorite pasta
4 cups of tomato sauce homemade or bottled
1 1/2 cups whole milk shredded mozzarella
3 large links of homemade Italian sausage cooked and sliced into bite size pieces or store bought
red pepper flakes
parsley
grated Romano cheese
a fresh loaf of sliced Italian bread
Cook pasta in salted boiling water till al dente. Drain. Spray a 3 to 4 quart baking casserole with cooking oil. Add pasta to the dish.
In a seperate small fry pan, add 2 tablespoons olive oil, saute garlic, mushrooms and peppers till soft around 4 to 5 minutes. Drain oil off or just place on a paper towel to saturate. Place peppers on top of the pasta in the casserole. Add sausage. Pour sauce on top of pasta, sausage and peppers. Top with mozzarella and grating cheese. Bake until cheese browns around 1/2 hour, sprinkle with red pepper flakes and parsley, if preferred. Serve with fresh Italian bread and more grating cheese.

Got me worried for a moment when I saw ziti..but see any pasta is ok.:) You know I love dishes from teh oven,and with ingredients like this what can go wrong:)

ReplyDeleteI love baked pasta dishes. They're great make ahead dishes and the left overs are perfect for lunch. I'm not sure there would be any leftovers of this though!
