Blueberry Coffee Cake

 Blueberry Coffee Cake is one of my favorite go to quick cakes. Delicious anytime of the year!





5 tablespoons butter softened

3/4 cup sugar

2 eggs

1/2 teaspoon vanilla

2 cups flour

2 1/4 teaspoons baking powder

1/2 teaspoon salt

1/2 teaspoon cinnamon

1/2 teaspoon lemon zest

1/4 teaspoon grated fresh nutmeg

3/4 cup milk

2 cups blueberries


instructions:




Heat oven to 350 degrees. Oil spray a rectangular pan. In a large bowl beat together butter, cinnamon, nutmeg, lemon and sugar. Add the vanilla, eggs and mix until blended. Add milk, flour a little at a time alternating them until mixed together. Fold in the berries. Pour into pan. Bake until browned on top around 50 minutes. Serve warm with butter or whipped cream.

I am just staring at this picture wondering what it is that makes this cake so moist, still cannot figure that out, but I sure would like a piece!
I have been shying away from the fresh berries recently because I got a moldy pack of raspberries the other day. You know you cannot see in the center by the way they pack them-very irritating.
Anyhow, your cake does look amazing and I do like the touch of spice you put in there-yum!

This sound marvelous. My wife grew up with a blueberry farm right next to her house, so they are one of her favorites. Her mom used to make coffee cake all of the time, but I don't ever remember a blueberry coffee cake. I'll have to make this for her.

I have oatmeal with blueberries every morning for breakfast. This coffee cake would be a nice change of pace. Plus it looks so moist, it makes me salivate.

Blueberries are getting very expensive here so do you think I could use frozen blueberries? Looks delicious. Pauline

yes but blot them dry with paper towels after they thaw first. Too much juice will ruin the batter.
