5 tablespoons butter softened
3/4 cup sugar
2 eggs
1/2 teaspoon vanilla
2 cups flour
2 1/4 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon lemon zest
1/4 teaspoon grated fresh nutmeg
3/4 cup milk
2 cups blueberries
instructions:
Heat oven to 350 degrees. Oil spray a rectangular pan. In a large bowl beat together butter, cinnamon, nutmeg, lemon and sugar. Add the vanilla, eggs and mix until blended. Add milk, flour a little at a time alternating them until mixed together. Fold in the berries. Pour into pan. Bake until browned on top around 50 minutes. Serve warm with butter or whipped cream.
With spices, coffee and blueberry, this cake could become one of my favorites ^_^ Great combination. Bye, have a good day

ReplyDeleteI have been shying away from the fresh berries recently because I got a moldy pack of raspberries the other day. You know you cannot see in the center by the way they pack them-very irritating.
Anyhow, your cake does look amazing and I do like the touch of spice you put in there-yum!

ReplyDeleteThis sound marvelous. My wife grew up with a blueberry farm right next to her house, so they are one of her favorites. Her mom used to make coffee cake all of the time, but I don't ever remember a blueberry coffee cake. I'll have to make this for her.

ReplyDeleteyes but blot them dry with paper towels after they thaw first. Too much juice will ruin the batter.
