Thursday, May 10, 2012
6 cups cubed raw chicken or leftover cooked turkey
2 pounds fresh cooked white beans or canned
1- 12 ounce can chicken broth
1/2 cup white wine
2 tablespoons chopped celery with leaves
1 can chilies (I used 12 ounces)
3 cloves of minced garlic
optional: 1 small onion chopped fine
2 teaspoons ground cumin
1 tablespoon chili powder
1 teaspoon dried oregano
1 teaspoon dried parsley
salt, pepper and cayenne pepper to taste
1 tablespoon garlic powder
1 cup diced tomatoes
2 cups crushed tortilla to thicken soup put through food processor
For a heartier meal try this option below:
Place all ingredients into the crockpot, mix, place the crockpot on low. Cook on high for 6 to 7 add the crushed tortilla chips 1/2 before done.
For a really delicious topping add some sour cream, shredded cheddar and chopped olives along with jalapenos! Optional: boiled rice or pasta of choice and drain. Pour chili over pasta before serving.
