I always love a light blend of pasta for either a whole meal or side dish. Here is one of my very favorites with lots of topping suggestions!
1 pound of your favorite pasta boiled in salt water drained and tossed with 2 tablespoons of extra virgin olive oil and 1/4 cup freshly grated Romano Cheese. Set aside.
Sauce:
1 freshly squeezed lemon no pits!
1/2 teaspoon black pepper, oregano, parsley and basil dried
pinch of cayenne pepper
1 teaspoon finely minced fresh garlic
1/4 cup melted butter
2 tablespoons extra virgin olive oil
1/4 cup grating cheese
Mix all together in a pan or microwave safe bowl, warm it up in the microwave or stove top till everything is blended together.
Pour over pasta. Garnish with suggestions below.
Garnish for photo above:
chunks of fresh mozzarella cheese
grape tomatoes cleaned and cut in half
long shredded Parmesan cheese
Fresh basil leaves
