Mom's Fresh Homemade Ricotta Cheese Recipe

So many versions, this is how Mom made it..             make it once you'll never buy it again! The cheese is smooth and the best part so easy!

Mom's Fresh Homemade Ricotta Cheese Recipe

2 quarts whole milk
1 cup heavy cream
1/2 teaspoon salt
3 tablespoons lemon juice
1 fine mesh cheesecloth

Place a layer over a sieve with fine holes with the heavy-duty (fine-mesh) cheesecloth and then place it over a large bowl.
Slowly bring milk, cream, and salt to a rolling boil in a 6-quart heavy pot over moderate heat, stirring occasionally to prevent scorching. Add lemon juice, then reduce heat to low and simmer, stirring constantly, until the mixture curdles, about 2 minutes.
Pour the mixture into the lined sieve and let it drain 1 hour. After discarding the liquid, chill the ricotta, covered; it will keep in the refrigerator 2 days.

If you want a low fat Ricotta here is what I do:
4 cups whole milk
4 cups reduced fat milk 2%
3 tablespoon lemon juice or vinegar
1 teaspoon salt

Follow same directions.
