Chuck Steak Vegetable Stew Recipe

In cooler weather I always wants something that sticks to your ribs so to speak and satisfies my hunger. Chuck Steaks are an economical steak that are delicious when slowly cooked in a stew. I didn't cut them into pieces and left them whole.

A little more fat and of course and more flavor than round steak which is lean and used for braciole

These chuck steaks came out delicious and tender in this vegetable one pot stew!

Chuck Steak Vegetable Stew Recipe





8 - 4 inch chuck steaks

olive oil

3 cloves minced garlic

1 - 28 ounce size can tomato sauce

1/2 cup Cabernet Wine

2 cup sliced green beans

1 cup sliced mushrooms

8 small whole potatoes peeled

1 cup sliced carrots

2 extra large bell peppers any color I used yellow and green

garlic powder



In a large sauce pan with a lid, add 3 tablespoon olive oil and heat the pan. Add the chuck steaks and saute both sides for around 2 minutes each on medium high heat. Add the garlic saute for a minute, do not brown garlic. Add the tomato sauce, Cabernet, peppers. beans, carrots, mushrooms and potatoes. Bring to a boil. Simmer for around 1 1/2 hours on low or until meat is tender. If liquid starts to get low, add some water. At the end add fresh basil, parsley, salt, pepper to taste. Sprinkle lightly with garlic powder around 1'/2 teaspoon.and the same for dried oregano. I also like to add a dash of cayenne pepper which is optional.
