Saturday, December 20, 2014
Just when you think you got all the cookies made for the holiday you remember another you love and forgot to make. Well this is one I made last year and skipped over by accident until last night. I was looking through my photos and saw my favorite cookie sitting on the tray last year and forgot to make these. I immediately got to them!

Nutella Coconut Filled Cookie Recipe

1/2 cup shortening
1/2 cup brown sugar
1/2 cup sugar
1 egg
1/4 cup milk
1/2 teaspoon coconut extract
1 1/2 cup  flour plus 2 tablespoons
1/2 teaspoon baking soda
1/2 teaspoon  salt
1 cup shredded coconut put through food processor
1/2 cup Nutella
1/2 cup white chocolate chips

Beat shortening and sugars in a bowl using an electric beater until blended. Add the egg, milk and flavorings. Stir in the baking soda, salt and flour the add the coconut.
Roll the dough into small balls and place on a oil sprayed cookie sheet. Using an index finger make an indentation in the middle of each ball. Fill with some Nutella. Cover with a small piece of flattened cookie dough. Roll into a ball again with floured hands.
Place each cookie back onto the cookie sheet around 2 inches apart
Bake in a hot oven at 375 for 10 minutes.
Drizzle with melted chocolate.
