No Bake Coconut Oatmeal Balls Recipe
2 cups old fashioned rolled oats
1 cup coconut more for rolling into later around 1 more cup
1/2 white sugar
1/4 cup unsweetened cocoa powder
1/2 teaspoon ground cinnamon
1 stick ( 1/2 cup) butter
1/4 cup hazelnut spread Nutella
1 tablespoon Godiva chocolate liqueur or vanilla extract
Powdered sugar for rolling
In a large bowl combine oats, coconut, sugar, cocoa and cinnamon.
Beat with an electric mixer until combined. Add softened butter, Nutella, water and liqueur or extract. Mix on low speed until the mixture comes together. Make 1 inch balls then roll them in flaked coconut then into powdered sugar. Place on a cookie sheet and refrigerate for at least 25 minutes before serving.
