Baked Potato Wedges and Sausage Recipe
2 pounds sausage cut into small pieces ( you can use chunks of pepperoni also)
potatoes sliced in wedges
dried oregano, basil, parsley and granulated garlic
Italian bread crumbs
Parmesan Romano grated cheese
Optional additions: halves of plum tomatoes with bread crumbs, sliced hot or any color bell peppers, onion sliced, mushrooms sliced, eggplant, zucchini.
Place the sausage and wedges in a bowl and any of the optional items, coat with three to four tablespoon olive oil. Spread on the parchment paper.
Sprinkle evenly with all spices including salt pepper to taste. Top with bread crumbs, cheese and drizzle with more olive oil just a little.
Bake at 400 degrees until wedges are browned and crispy.
