It's time everyone needs to concentrate on what they are eating that's  healthy and wholesome. Make your own chicken bites and feel safe on what your feeding your kids. Better for everyone. Almond flour is a wonderful substitute for flour. The nutty taste gives this chicken the perfect bite.

Not only are they healthier, they're easy to make because they're baked!

Knowing you're making a healthier recipe version is your secret, they will seriously never know you altered you recipe.

 In today's fast food society, we continue to see kids get sick often from all the preservatives and things we can't pronounce in the foods put in some of these franchises.

Here is a great start with one we love.
If you have picky eaters leave out the spices. Of course this is Italian style!

When I see all the ingredients in the packaging on frozen nuggets, I cringe. I can't imagine why anyone would eat something they can't pronounce. That surely makes me not want to give it to my family.

During the past 30 years of cooking, I have always looked for a healthier way to cook foods everyone loves. Even though fast food can be tasty it sure isn't the healthiest foods to feed my family,

Working full time plus hours, I needed to ensure I was not getting into a fast food trap that was unhealthy when I made quick meals. This is one I made often

You can dress them up too! After they are baked, add some marinara sauce and low fat shredded mozzarella for a tasty Parmesan dish! Plus leftovers are great in a whole wheat sandwich.

After baking these there is no draining on paper towel as you would for a fried version. These come out super crispy and juicy inside!

What I love about the ease of this recipe, is the coating. Just place all the ingredients in a zip lock bag, shake and place on a lightly oil sprayed or parchment lined cookie sheet.

Eating healthy never tasted so good!


1 cup almond meal or almond flour 
1 1/2 teaspoons granulated garlic
1/2 teaspoon salt or more to taste
1/2 teaspoon black pepper or more to taste
fresh chopped parsley basil  around 1 tablespoon each
2 boneless chicken breasts cubed (sliced lengthwise then in bite sized pieces) Rinse in cold water. 
1 plastic freezer size bag
 Cooking Spray, Olive oil  or Canola oil 

Optional : grating parmesan cheese

Add the almond flour and spices in the bag. 
Shake the moistened chicken in the almond flour mixture. Spread on a parchment lined cookie sheet, spray the chicken with oil cooking spray or  drizzle with olive oil lightly over the tops. Bake at 400 degrees hot oven until golden brown. Remove from oven.  Sprinkle with Parmesan cheese and chopped parsley.
