Best Ever Apple Muffin Recipe

It's that time of the year when apples, cinnamon and baking comforting treats for fall come out of the oven. The wonderful smell they have baking makes it hard to wait to eat them! Great plain or slathered with butter. Cold or warm,  this is my go to apple muffin recipe.
Simple and utterly delicious, moist and tender.

Best Ever Apple Muffin Recipe

1 cup buttermilk
2 cups flour
1 tablespoon cinnamon
1/2 cup softened butter
1/2 cup white sugar
3/4 cup brown sugar
1 egg
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
2 cups chopped mcintosh apples or other baking apples

Line cupcake tin with 12 wrappers (paper liners) I like to spray them with oil spray also. Preheat oven to 375 degrees.
Cream the butter white sugar and 1/4 cup brown sugar.  Add egg then buttermilk mixing well.
Stir in the flour, baking powder, salt, baking soda and cinnamon. Fold in the apples.
Scoop batter into cupcake tin and sprinkle the remaining brown sugar over each one. (you can add cinnamon to the 1/2 cup sugar if you like also around 1/2 teaspoon)

Bake muffins for 25 to 35 minutes, use a toothpick in the center to ensure they are fully baked.
