Central and Upstate N.Y. Italian Sauce and Gravy Debate

There is always a debate on what this delicious stuff on top of pasta is called sauce or gravy?

Is there a right and wrong?

People will argue for hours to project their upbringing and hometown nicknames or love for this fabulous topping for macaroni.

Growing up in the East Utica area of the U.S., our family always made sauce from real tomatoes, not canned sauce which it states on the can itself as tomato sauce,

Tomato or Crushed Tomatoes, whole tomatoes, tomato paste, we all make ours differently from Region to Region of Italy, it's no wonder many names hit the US to make the sauce, and gravy to become such a debate.

But is there a difference between the two names, sauce or gravy?

There is no difference at all except for the family history in the area you grew up in from the hundreds of interviews I discovered.

The sauce is primarily just that, the topping on pasta, and gravy came from traditions passed on by different parts of the country as well.

Still today, it will be one of the most heated debates on food, no matter where you live, it's called one or the other.

Honestly, just ladle it on my pasta, it's all good to me and whatever you do, don't be late for the dinner table!

DIY evaporated milk is so economical and so easy you'll never have to buy canned again unless, of course, it's for emergency purposes IE snowstorms, hurricanes, etc.


If you use evaporated milk in baked goods or cooking recipes, then you can make it easily in your own kitchen, and the perfect way to use up lots of milk you may have ready to expire in your refrigerator.


Evaporated milk can even be frozen, so don't worry if you make more than you can use up just freeze it!

These Potatoes are the best side dish on the planet because they are just as it sounds pizza topped with your favorite pizza toppings, ours just happens to be pepperoni.

One of my favorite Italian side dishes in our family is potatoes and gourmet topped with Marinara Sauce, melted cheese, and some favorite pizza toppings these are a home run.

Homemade marinara sauce is the best but of course, you can buy a jarred sauce favorite and load the top up with a  blend of provolone, mozzarella, and grated cheese, it's a gourmet Italian masterpiece.

Slow Cooker Venison Sauerbraten

Sauerbraten is a national dish of Germany, usually using beef or lamb this one is a stew style sauerbraten that you can make from a venison tenderloin or by using stew meat.


Of course, you can use beef or lamb also, this recipe is just a guideline.


The gravy is delicious and I often serve this with a favorite mashed potato recipe and cabbage.


You can adapt this any way you prefer, the venison has to be marinated and will take a few days for this recipe so it's a longer process than normal with delicious results.
