Two Great Tropical Tastes



These are one of those desserts where you can't believe how easy they come together when baking.


I look at the texture and the decadent pudding that it makes automatically and just am amazed by the transformation.


I love the fact that coconut and lime go so great together.


If you want a taste of the tropics this will do the trick!

Lime Bars instead of Lemon!



We pretty much all have tasted lemons bars and love them, don't we?


When I make these for the company I get visiting from up north they all go crazy over these, a nice change for sure.


It's almost like being in Key West during their vacation with this lime style bar.


They are really a refreshing little treat.


We still love old fashioned lemon bars but with a twist of lime and coconut, welcome to paradise!






Made with just a few ingredients



I love that these have very few ingredients in them.


You can whip up a batch in no time just keep a bottle of lime juice on hand.


I always keep my coconut in the freezer so it stays fresh, so I have it all year long.

Key Lime Pie is huge in Florida and all the down through the Keyes of Florida.


These little pie squares are a quick little lime pie treat, just a little lime craving put to rest until you can vacation there.

I know everyone has seen those lemon bars all over the web, but I love lime!


I even order lime for my water when we go out to eat in a restaurant with my dinner.


That's why I adapted this recipe to a Florida Tropical little lime gem.


This is refreshing and delicious!

If you're not a lime and coconut fan?



No worries, you can substitute orange or lemon.


Actually, you can use any citrus juices, I even used pineapple once to make these Coconut lime bars.


If you can get Keye Lime juice in your area, it's my favorite, but you can just use regular lime too when not available.


They bake evenly, make their own magical pudding in the bar all in one pan!


How simple is that? I like to line my pan with parchment for easy removal.


Just be sure to cool completely before cutting them!

A delicious burst of lime pudding in a crunchy buttery crust. Lime with coconut in a wonderful little bar cookie.

Ingredients

  • Dough
  • 1 cup butter, softened
  • 1/2 cup powdered sugar, plus more for dusting
  • 2 cups all-purpose flour
  • 1/2 cup sweetened shredded coconut
  • 1/2 teaspoon ground ginger
  • 1 teaspoon grated lime zest
  • Filling
  • 4 large eggs
  • 1 3/4 cups granulated sugar
  • 2/3 cup fresh Keye lime or lime juice (you can use bottled when not available)
  • 1/4 cup flour
  • 1/4 cup coconut
  • 1/2 teaspoon baking powder
  • Optional: 2 drops green food coloring

Instructions

  1. Dough:
  2. Preheat oven to 350. Grease and flour a 9x13-inch baking pan or line with parchment paper.
  3. In the bowl beat together butter and powdered sugar until fluffy. Stir in 2 cups of flour, ginger, 1/2 cup of coconut, and lime zest.
  4. Mix until well combined.
  5. Press dough into baking pan and bake for 20-25 minutes or until dough is light brown in middle and browned along edges. Set aside.
  6. Filling:
  7. In a medium bowl, beat the eggs and granulated sugar. Stir in lime juice until blended.
  8. Stir in the 1/4 cup flour and the baking powder. Add the optional 2 drops of green food color.
  9. Spread 1/4 cup of shredded coconut over baked crust. Pour lime mixture over top and bake for 20-25 minutes or until set and firm.
  10. Cool completely before cutting.
