I really love stuffed peppers and make them all kinds of ways. This is a delicious meat stuffed one that seems to be the all time favorite hope you like them too. These have a great flavor that is enhanced by the peppers. I have made them so many ways but these meat stuffed are the families all time favorite.

This is one of many Italian recipes we grew up on.


The peppers are soft when baked and stuffed with a delicious meat stuffing with cheese on top.


Mom sometimes added rice to the meat to make them even fuller.


These are made with just meat to be lower carb.

Economical Meals



Mom really made stuffed peppers when she wanted to use up leftover.


I can't tell you how many times she substituted hamburger with leftover chicken, pork, even steak.


It really didn't matter what kind of meat she used.

My Secret



The filling in the stuffed peppers were always my favorite part.


I have a secret to tell you though, when I was growing up I wouldn't eat the pepper, that was always left on the plate.


I only ate the stuffing in the peppers, I had to hide it from mom or she would make me eat it!


Now I love the peppers as an adult.

Halloween



During Halloween, I like to carve out the peppers to look like pumpkins.


It's really easy to do with a sharp knife.


Then just filled them and bake.

The Stuffing



If you aren't a meat eater, you can stuff these with just rice and boiled chopped eggs.


Mom often got creative and even made them stuffed with rice, shrimp and tomato sauce, those were delicious too.


If you have leftover meatballs and sausage from making sauce on Sunday, she would stuff the peppers with leftover meat crushed.


This is a basic recipe for stuffed peppers and you can add what ever you like in them.


Eating low carb and healthy lean meat with less fat, is the way I like to make stuffed peppers.


Again you can adapt your recipe any way you like as the original recipe calls for rice.

Italian Meat Stuffed Peppers

prep time: 15 minscook time: 1 hourtotal time: 1 hours and 15 mins
These are whole green peppers stuffed with meat then baked.

ingredients:

bell peppers 5 or 6
28 ounce can tomato sauce or crushed tomatoes
2 pounds ground beef mixed with pork or use all ground turkey
2 eggs, beaten
3/4 cup dry Italian style flavored bread crumbs
1/4 cup tomato sauce 
1/4 grating cheese
1/4 teaspoon of cayenne pepper
1/2 teaspoon Worcestershire sauce
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon fennel seed (optional)
2 cloves of minced garlic
1/2 teaspoon garlic powder
1 diced tomato
salt, pepper to taste
white wine or water
Garnish with grated cheese
mozzarella or fontina cheese shredded
Optional: 1 cup raw minute  rice added to the meat
Other meat suggestions: cooked minced chicken, leftover meatballs and sausage, shrimp
and rice, chopped cooked steak, pork chops or tuna with rice.

instructions:

Preheat oven to 350 degrees
In a large bowl, mix together ground beef or turkey, eggs,  diced tomato,  bread crumbs, grated cheese and 1/4 cup tomato sauce, add rice if using. Add oregano, basil, garlic powder and any other seasonings. With a sharp knife halve the  peppers or cut the middle core out and leave whole to stuff. Clean, wash, removing seeds. Place in a greased large baking pan. Stuff peppers with meat mixture. Pour some sauce over each one and add wine or water too the bottom of the baking dish around 1/2 cup. Bake covered with foil at 400 until pepper is soft and meat is cooked and around 35 minutes. Add more water and sauce if starting to dry out. Last top with cheeses on each pepper and cook around 10 minutes just to melt or broil.  Add more sauce and grated cheese on top when serving.

  5. I grew up on stuffed peppers too. They were so good and mamma made them perfectly. She would use the beef that she'd made brodo with -- nothing was tossed out. The cooked beef was either made into polpette or stuffed peppers. Yum - my mouth is watering. Yours look just like my mamma's.
