I don't know about you but I hate standing over a hot stove cooking breakfast. The ease of the recipe will give you all the same great flavor in a pancake baked in a pan. It eliminates standing over a hot stove and waiting patiently for the pancakes to get done.
Using bananas in this recipe really makes them tender moist and delicious. The kids all love these and ask for them often. I never mind making these because they are so easy. I sometimes even add some cooked sausage on top so that meat cooks on top.
I love all in one pan breakfast. What better way then to get it all ready, put in a pan then go get ready for your day. Maybe just sit, relax and drink your coffee while the oven does all the work. Sound good? Try this one it's amazing!
Baked Banana Pancakes
1 cup flour
2 teaspoons baking powder
1/4 teaspoon salt
2 tablespoons brown sugar or (use a sugar substitute)
1 teaspoon cinnamon
1 teaspoon vanilla extract
1 cup milk
2 tablespoons vegetable oil or use applesauce
2 mashed bananas
Optional: these are not overly sweet you can sprinkle cinnamon and sugar mixture on top before baking. Also these are delicious with cooked breakfast sausages on top of the batter before baking.
Preheat oven 350 degrees.
Mash bananas and set aside.
In another bowl, place all the dry ingredients in a bowl and stir together. Mix in the egg, vanilla, oil and milk. Fold in bananas. Batter will be lumpy. Pour into a greased pan or parchment lined. Bake at 350 hot oven until middle is set around 35 minutes. Can be done on a griddle on stove top also. Serve with warm maple syrup.
