I really love making holiday cooking fun for the kids, and these, Peanut Butter Krispie Easter Eggs are the perfect no-bake treat!

This recipe is from my childhood.

Now that we have kids in the house again they just love making these along with our Holiday Ice Cream Cone Easter Baskets and of course, using Easter Peeps to Decorate Cupcakes and Cakes.

I would guess it's over 50 years old and I don't want to admit it's that old!

Peanut butter with rice Krispie cereal, some chopped peanut butter cups, are just two of the ingredients in these cute little Easter eggs.

They're all ready for Easter with festive sprinkles on top. The kids go crazy when I make this recipe, so they won't last long.

They're more like crunchy candy. No-bake and done in minutes!

Easter Mini Cassata Cheesecakes

I love to make an assortment of Italian pastries for Easter and these Mini Cassata Cheesecakes are just perfect for smaller families.

Every year I use to make mom's Easter Cassata in her memory which is very large and now with two people, I just make them in this smaller version and freeze them.

I still make Grandma's Easter Bread which is another Italian tradition we do every year.

I can take out what I need and they taste just as fresh as first baked after thawing in the refrigerator.

This year I made it just a little different.

This custard ricotta filling is perfect in these little cupcake tins for individual servings and so cute!

It's just a little more festive looking. I added a little bunny baked into my little cheesecakes.

The children loved them. They make such a pretty addition to the dessert platter of baked treats for our dessert tray.

This leftover corned beef and cabbage soup is a tasty comforting way to use up corned beef after St. Patrick's Day.

Chances are you have leftover cabbage too!

Of course, you can just buy a deli-style corned beef, then just dice it up for this recipe.

I love all the herbs and vegetables in this hearty soup.

It sure is a great way of using leftovers.

I can't wait once a year to make it, so I do use deli meat when I crave it.

By adding the peanut butter in there they stayed softer.
