Happy Cinco De Mayo Recipes

For many Americans, Cinco de Mayo means enjoying Mexican food and probably a few margaritas.



But Cinco de Mayo, which means May 5 in Spanish, is probably one of the most misunderstood Mexican holidays.



Contrary to popular belief, Cinco de Mayo is not Mexico's independence day.



Mexican independence is celebrated on September 16th.



Cinco de Mayo commemorates the Mexican army's unlikely victory over the French forces of Napoleon III on May 5, 1862, at the Battle of Puebla.



In fact, the holiday had its origin more than 50 years after the date associated with the country’s independence.

Tortilla Tex Mex Casserole

Tortilla Tex Mex casserole is one of our family's go-to meals for movie nights, game day and even picnics.


This all in one pan meal is a layered with tortilla, chicken, cheese, and beans, corn, tomatoes, sauces, and when you slice it, the melted cheese is blended all in one delicious bite!


This can be made ahead of time and actually tastes better the next day, and leftovers are great!


It also freezes well for another meal so I often separate it into several containers for the kids for another quick meal.


We usually celebrate Cinco de Mayo with this American Mexican meal and many other Mexican styles recipes.


This makes a big 13 x 9 pan and will feed a large crowd, it's just perfect for a party!


You can even make this all vegetarian and not add any meat at all.


This all in one pan meal is pure comfort food and will satisfy any Tex Mex craving.
